Vegan-friendly food for a baby shower?

Hershey's and Nestle aren't. Trader Joe's and Whole Foods brands both are; Girardelli is; and there's a brand that's a bit more expensive, Sunspire, that's in Natural food type stores. if you can't find any of those, most dark chocolate is vegan (generally the higher quality like Lindt and Ghirardelli) so you could just chop up a chocolate bar? I love everything I've made from Vegan Cookies in Your Cookie Jar. What kind of cookie are you looking at? There's a fudgy chocolate oatmeal one that's really good, and a chocolate crinkle, and some great fancy almond cookies. vegetarian proteins?

Where are you getting that? Quinoa is a complete source of protein, as well as a grain. Most legumes like beans, chickpeas, lentils, etc have plenty of protein. Then there are nuts and seeds, and many vegetables and grains have a small amount. Then of course, you can add eggs and dariy products if you eat them. The average American eats too much protein. Soy is healthy and a good source of protein, but many vegans get along fine eating no soy at all. (Some people like to avoid it, and it's often more processed than some people would like).

Experimenting w/ Unusual Flour- Coconut, Green Pea, Spelt, Buckwheat,Flaxseed, White Bean.......?

Flaxseed is generally used an an egg substitute, not flour. You blend one tablespoon of ground flaxseed with two tablespoons of water to replace one egg in a baking recipe. It can also be added to things like oatmeal, because it has a pretty neutral flavor and is very healthy (high in fiber and omega-3's).

Incorporating whole grains in granola bars?

I thought I remembered reading about puffed quinoa in granola, so I tried googling, but I can't actually find instructions for puffing it (except that you do it the way you would rice). It seems like it's sold already puffed though...

I'm actually making granola bars right now and I just used oats for grains, but I dumped flax and chia seeds in, hoping that they will both help them hold together and add some omega-3's.

Great Recipes without Eggs?

Wonderful brownie recipe in Vegan Cookies Take Over Your Cookie Jar. You can view it in the preview on Amazon; it has a little bit of silken tofu in it, but you don't taste it at all. It's the Deluxe Cocoa Brownies. (Eggless brownies are for some reason harder than a lot of baked goods and the binder is really needed).

Techniques for Scrambled Tofu?

I think tofu scramble is often softer. People are trying to replicate soft scrambled eggs. If you want it firmer, make sure you use extra-firm tofu, and maybe try cooking it separately until it browns on its own before adding it to the veggies. Just cook it in a little oil with some soy sauce and it should firm up. I think this recipe is good:

Tofu French fries technique?

Coating in cornstarch helps. (I've done this only with no egg wash, just on dry tofu). Chinese restaurant tofu is really deep fried though.

Does vegan brunch exist?

I have been here twice for brunch, and it was really really good. I had the tofu benedict both times because it was so good. My mom, who is rather vegan-food-opposed, loved the biscuit that came with it even though there was no butter. They have crepes and waffles, tofu scrambles (also really good), a few baked goods and more lunchy foods.

I also really like the brunch at Red Lentil. They can make all their egg dishes with tofu or eggs, and their pancakes are amazing.
