New All-Clad Handles... About Time.

Hi Ray,

What is up with the popularity of induction? I love my gas stove.

New All-Clad Handles... About Time.

Hi Daren,

I had the same reservations about the I5 looking haggard. They are perfect out of the box and for whatever reason they look better in my kitchen than in the store. It could be the lighting and/or the silvernox finish making them look off. How they look after a lot of use, i won't know for a while, just got them yesterday.

I made dinner tonight and had two pans going with lids and i realized if i had the tk universal lids they would have overlaped on the stove. Plus, the condensation would have been running all over the place.

The performance has been night and day better than what i was using before. I made jam yesterday and it reduced beautifully in the conical sauce pot.

I agree that the TK is sexier, if they had regular lids I would have purchased them. I really wanted to buy American too, feel a bit guilty about not keeping it in the family. That said, I wasn't thrilled about the look of the I5 but since trying them at home I've changed my mind and think they look nice. I love the clean up too!

Just buy a pan of each and test it out maybe that could help you with making a decision.

Thanks to all for cookware suggestions the past few weeks. I finally made a decision and bought some pieces of ....drum roll......Demeyere I5. I got to cook with two pans today and they are awesome! I'll be adding more to my collection, hopefully i can pick them up on sale. So far i have the:

8 & 9.5 skillets
3.5 saucier
4qt saute (a new piece they added to the line)

I never got to handle the Atlantis in person (probably a good thing:) but I decided against it due to the weight of the pans. The AC TK really appealed to me but the universal lids killed it.

I love the idea of only three lids, I don't find them ugly, and I have the perfect storage space, but not sure how functional they are if they can easily be bumped or moved. I also noticed in the videos TK didn't use the lids in the oven.

I worked in high end restaurants for a long time. I never remember chefs or cooks using those types of lids.

After having a crowded cooktop yesterday, I ruled out all clad tk because of the lollipop lids. I can see them getting knocked over very easily. If they come out with regular lids before I purchase my cookware I'll reconsider. Too bad about the lids I really liked the pans.

LOL...you all are true cookware geeks! I just want a great set of ss pans:) I'll post an update when I have it figured out. Thanks for all the comments and suggestions!

Funny no one has favored the new AC:)

BTW I have LC and two de buyer mineral pans.

Okay everyone. I need to make some decisions and appreciate some help!

What would you choose and why if you were considering the TK (I was an AC hater until I saw these) Fissler OP, Zwelling Sensation, Demeyere I5, De Buyer Affinity or the Atlantis?

Keep in mind I have a gas stove with higher BTUs. Price is a small consideration but I'm really looking for value for the money I'm about to spend. I have limited cabinet space (one of the reasons I like the nesting feature of the TK).

I have a gas cooktop. I looked at the I5 at SLT you think there is much difference between the two lines? Isn't the I5 cladded and the TK mixed design according to function?

Yeah, it was likely user error, but you never know. They said they tried different temps, oils etc.

So, I called WS and they have a 30 day return policy if I have problems with the cookware. Plus, I asked about additional pieces in the future and was told there are plans for additional pieces but they didn't know what pieces or when they would be released.

I just read the only review so far on WS the person reviewing said everything stuck to the cookware:( granted it's just one persons opinion, but now it's coloring my decision.

Good to know the lid fits close on the stock pot! I'm going to go back and take a closer look at all the pieces.

Does anyone know when WS does their cookware sale?

Saw this line yesterday. Although I had no interest in buying AC, I like this new design. The only drawback is the lids, I haven't used a universal lid before and not sure if I'll like it.

I was so close to purchasing the Fissler OP. I've been hesitating because of the weight and lack of rich browning that I've gotten with my pressure cookers.

Someone want to chime in on the lids that has experience?

Fissler OP, De Buyer Affinity or Sitram for a gas range?

Thanks! I'm glad you have a strong opinion about the sitram, I'll rule it out. Since my post I was lucky to find two Fissler pressure cookers for a steal! I've been using them since my post and live the high quality! I'll probably be purchasing the Fissler OP in various pieces. I'm also curious about the Crispy pan they make. My pressure cooker skillet has the same waffle bottom and so far I like it though I haven't really seared meat yet. The only downside is that the cookware is heavy, but Its just a trade off for the superior cooking ability.

Fissler OP, De Buyer Affinity or Sitram for a gas range?

Looking to upgrade my SS cookware and I've narrowed it down to Fissler OP, De Buyer Affinity or one of the Sitram lines. I have a Kitchenaid gas cooktop with more BTU's than a standard range. I'd really appreciate some advice thanks!

De Buyer Affinity? Owner impressions and comments?

Thanks Duffy! Vollrath brings back memories of working in the restaurant industry where I learned so much about cooking! Right now I'm leaning towards welded cookware. I'm gong to try and drop by a local restaurant supply and check it out. Thanks!

De Buyer Affinity? Owner impressions and comments?

Thanks for posting this. I was aware of Fissler pressure cookers, but didn't know about other cookware. I'm intrigued and now have analysis paralysis! I'm looking at Sitram Profisserie, De Buyer Affinity and now (thanks to you :) Fissler.

I'm replacing some old Cuisinart SS. i like to cook, but tend to roast veggies and fish and make soups and salads most often. I am a canner and do break out a large stock pot in the summer that could be bigger. Have some Le Cruset and two De Buyer carbon steel that I haven't used yet as well.

Canning in LE PARFAIT jars?

I've been wanting to try the wire bail jars for canning. After some research I purchased the Italian wire bail jars by Bormioli Rocco. They were more affordable and readily available at Sur La Table. There are instructions on how to use them online. I like the Le Parfait instructions better because they have step by step photos. http://www.leparfait.com/usage.html

KrazeyLady - thanks for your comments! I'd appreciate any more information you would like to share on canning with wire bail jars. Wire bail jars are not recommended by the National Center of Home Food Preservation here in the US, so there is little information on proper usage. Regardless of the warnings, knowing they are still being used in Europe, I am comfortable using them for more acidic foods, except tomatoes. I think I'll wait to get more experience with the wire bail jars before canning any tomato product.

Kaymbee - I don't know if you plan on using those knockoff jars for canning purposes, but I wouldn't recommend it. Le Parfait and Bormioli Fido jars are made specifically for canning in Europe, you might be taking a risk with a knockoff.

Food scene in SLC

Welcome to SLC!

A few resources to keep current on new eats and events Urbanspoon.com, the Catalyst and City Weekly two free publications that you can pick up around town at local coffee shops, markets etc.

I'd like to add to the grocery store list Dan's Foods. There are only 4 stores on the east side of the valley. It's more expensive but their meat and produce department are very good (don't like the 3300 S. store though). Meyer's meat market in Holladay has quality meat. There is a flagship Whole Foods that is about to open at Trolley Square too.

Some restaurants you may not hear about on this board that are steeped in local tradition:

Hires- Don't forget to order fry sauce!
Maddox (Brigham City) be prepared to wait. Farms stands galore along highway 89.
Little America's cafe- Good comfort food. Every Sunday they have cream of chicken noodle soup, and delicious rolls!

These restaurants are like home to me. I grew up eating at these places. There are many others but unfortunately they are no longer apart of SLC culture.

Lots of new great restaurants around. Many have been mentioned already. A few I have recently tried:

Pho Noodle House (Orem) the steak Pho was soooo good. Served steaming hot!
Katmandu
Brunch: Finn's, Wild Grape Bistro, Pago, Eva's
Frida's
Vinto
Cafe Molise

I hope this helps! Best of luck with your move.

My Cuisinox Liberta 10 cup stove top espresso maker and Breville Milk Frother make perfect cappuccinos to start my day! Can't live without them now. My introduction to the no-knead bread method also tops the list.
