Heart healthy brunch ideas?

My boyfriend's dad had a heart attack about a month ago, and we offered to cook his family brunch this weekend. I'm used to making over the top desserts and egg dishes for brunch, so I'm feeling a little at a loss. Does anyone have some good heart healthy breakfast/brunch recipes they love?

EDx Harvard Course Science & Cooking: From Haute Cuisine to Soft Matter Science

Is anyone else taking this free online course? It explores the science behind cooking and food and will have edible labs.

It's starting today and features amazing chefs from a bunch of great restaurants. I saw some of the free lectures at Harvard when the course began, and they were fascinating.

I more meant healthy in whatever your definition of healthy is. I have no particular dietary needs, except that I've been in a slump and resorting to whatever is easiest, not what's best.

healthiest meal you can think of (that you still want to eat)

I’m in a dinner slump, trending towards Pasta and fast food/processed food. I do like healthy food (last night I had Spaghetti Squash for the first time!), but I could sure use some inspiration.

What is the healthiest meal you can think of (that you still want to eat)?

I don’t have any food allergies/dislikes but I don’t eat a ton of meat.

Best Cocktail by the Pitcher?

I'm having a bbq tomorrow, what should I serve as a cocktail? I'd prefer to be able to whip up a big pitcher of it.

Favorite Meals for 1 or 2?

For the life of me, I can’t figure out how to cook for less than 4 people. It’s like, that’s how I learned to cook and my mind will never understand that I don’t need to feed 4 people at every meal.

I need help tracking down recipes that are good and will feed me for only a couple of servings. I don’t tend to do well with the big batch of whatever and eat it all week strategy, because then McDonalds becomes really tempting :)

I have some freezer space but not a lot, and often get thrown by the fact that I can’t really buy half a pound of ground beef at the grocery store, or open half a can of something, etc. And no real restrictions, except that I'm not a huge meat eater in general.

Any advice?

Favorite "Freezer" Meals

I'm kind of a Pinterest Junkie, and one of the things I see ALL THE TIME is links to meals that you can either freeze after they're made (chili or whatever), freeze and then pop into the oven to cook, or put meat and marinade in the freezer and thaw then cook. AKA freezer meals.

A lot of these are kind of bland, and but I love the idea. So I thought I'd ask my fellow foodie friends, what "freezer" meals do you make?

When Cheapo is Better than Pricey?

Thanks for all the awesome tips everyone! I just thought it would be a fun thread, It's interesting to see what people like and how it correlates to price. I personally will definitely splurge when I think something's worth it, but am trying to keep my budget fairly low.

It's like how some produce like tomatoes, corn or strawberries taste markedly different from a farmer's market or garden than from the supermarket, but others don't have a huge difference in taste. It gets even more interesting when you get to things like canned tomatoes or whatever and the method of getting the food to you is the same, and in some cases you can really tell the difference and in others the store brand is totally ok.

I also love hearing about equimpent, I had a suspicion that the cheaper coated dutch ovens might work ok, but I was definitely wavering over the price. Now I feel like although the Le Crueset dutch ovens are probably better, the Lodge ones might work for what I need for now.

Pizza Luce's focaccia?

I grew up in Duluth, and my family would go to Pizza Luce up there on a fairly regular basis. I looooved it and have really fond memories of going with them. The only thing I ever got there was the artichoke dip and focaccia.

I moved away 9 years ago and haven't been able to get back since (I know, so sad!). And lately I've been thinking about trying to recreate a little taste of home here on the East Coast, but although I can remember the dip vividly, I can't seem to remember much about the focaccia it came with, except that it was good. Could someone remind me what was in/on it?

What to do with a giant cast iron Dutch oven?

You hit the nail on the head, it was a totally sweet gesture that he ordered a full month before my birthday because he heard me mention that I wanted one. I'd love to get another smaller, preferably coated one (sometimes it's hard when people give you thoughtful gifts and you aren't able to specify the one you want, isn't it?) once it won't seem like I'm replacing his gift. In the meantime, I'd like to get some use out of this one, but will probably need him to lift it

My wonderful boyfriend got me a huge cast iron Dutch oven for my birthday... In may. I haven't really used it yet, mostly because it's kind of dauntingly large and heavy. What should I make in it? How do you use your Dutch ovens?

Yeah, that makes sense. I'm trying for small sustainable changes on the way to a goal rather than big ones that I'll have a hard time maintaining.

Luckily I'm mostly just looking for a little more balance in my diet, which I know is waaaay too carb heavy. I'm not really willing to cut anything out completely, especially not things I like to eat, but I am willing to adjust the amounts to achieve better health. I just tend to fall back on pasta potatoes and bread and I was looking for some tasty alternatives. If I happen to lose weight in the process, that's awesome, if not, at least I won't be putting a ton of empty calories in my body as often.

I can't quite convince myself that fruit is bad for me :) Plus it's definitely the least of my carb worries, I'm pretty sure it's the half pound of pasta that I can tuck away that's making me gain weight.

Awesome, thanks for laying that out for me. I have tons of leeway, since it's totally self imposed and my carb habits mean that I end up eating huge bowls of pasta on a fairly regular basis. So really there's no where to go but up. I am just stuck in a super high carb rut, and it can be difficult to come up with healthy/filling meals that aren't carb based.

Hi my name is Starburn and I’m a carboholic. I’m trying to reduce the number of pasta/carb based meals I eat per week but I’m running into a problem that the great and wise ChowHound hive brain may be able to help me with.

I’m not a big meat eater, and most of the low carb recipes I’ve looked at rely heavily on meat. Do you have any super tasty, satisfying low carb meals that you love? Please help!
