How long do liquors like Kaluha and Bailey's Last?

Bringing back an old thread to describe my experience. Two hours ago I opened a bottle of Baileys Original with an expiration date of 09/2008. It had been kept in a dark, dry place at cool room temperature. Somehow it got shoved to the back and forgotten while newer bottles were used.

I poured some in a glass. It smelled OK. Looked OK. Tasted OK. After two sips, I left it in the glass for two hours. Now I can see some deterioration. The inside of the glass is coated with sugar crystals from swirling. In bright light I can see a thin layer of small particles floating on top that look like fat globules. It's clearly starting to break down.

What to buy from King Arthur Flour catalog

Parchment paper. 100 sheets already cut to fit half sheet pans for $19.95. Great quality paper too. It's flat and doesn't curl up as the rolls do.

Spice Storage Chest

I've had one for over three years and absolutely love it. Mine is the large one. It's so easy to keep both half size and full size jars arranged and organized. It's surprisingly sturdy although I wouldn't pull out more than one drawer at a time to keep it from tipping. It fits inside a standard kitchen cabinet very well too. Nice that it's made in the USA.

Spice Storage Ideas Photos

Mine is the 11 inch wide one. I've had it for at least 3 years and it's held up well. Penzey's changed to glass instead of plastic for the smallest size but the extra weight doesn't seem to affect it. Just don't jerk the drawer out hard or fast and all will be well.

Need help with my Staub pot

I second the suggestion for Molly Stevens "All About Braising." and would add the Cook's Illustrated "Best Slow and Easy Recipes." My copies have dozens of Post-It notes marking good recipes.

Staub colors @ Sur La Table

I saw them on Monday. Both are excellent. I have a couple of pieces in titanium. The Fumee is very similar with a metallic finish. La Mer is magnificant. A perfect sea color. It's such a deep rich blue-green. I'd love to get one but I already have all the sizes Sur la Table carries except the 9 qt. That's just too heavy. Wish they'd carry the 7 qt round like other stores do.

What's The Oldest Thing You Cook In/With?

I splurged on a couple of Wusthof Classic knives for my single girl apartment in 1970. They're still in use even with wooden handles. Dansk enameled steel casseroles from the early '70s. My fine mesh skimmer has been used extensively since 1971.

Please recommond a fridge > 28 cu ft.

Mine is the RFG 298. It has ice and water through the door and the separate icemaker in the freezer. I'm guessing the latter was added because people complained about the small capacity of the icemaker on top. The 298 may have addressed many of the complaints about the 297 model.

I forgot to mention the pantry tray which is a shallow drawer filling the full width below the two crispers. It's perfect for yogurt, bacon, cheese, spices, deli meats etc. It can also be cleared out to store platters of food until serving. A very versatile refrige.

Jay, We must not be speaking the same language. To me a loop is the C shaped handle and the long handle is a handle. No matter. Hope you find what you're looking for.

I have the steamer with the C shaped handled/loop and love it because it never gets in the way when using it with a long handled saucepan.

I bought a 29 cu. ft. Samsung French door refrigerator in November and I love it. Mine is the three door model purchased at a great savings because they were promoting the newer model with four doors at the time. Mine has two icemakers, but the one in the bottom freezer can be turned off and the bin removed if you don't need it. The interior configuration is perfect for me. It's very flexible allowing for very tall items if necessary. The motor is fairly quiet, but dropping ice does make a noise for a second or two.

hard water stains?

Found it!! It's called the Tea Kettle Scale Collector and is made by Fox Run. I found it on a few websites for $3 - 4. As stated above, I started using mine with a brand new stainless tea kettle. It has worked perfectly since. There is no scale on the inside in spite of hard water.

Spice Racks for Penzey's

Spice Stack is freestanding. It would sit on a counter. It's a plastic box with three drawers which are shaped to hold two small or one standard size spice bottles in each section. It comes in two sizes.

It is not designed to fit in a drawer. I'd post a photo if I knew how.

Spice Racks for Penzey's

I'm very happy with my Spice Stack. I've had it for over three years and haven't regretted the purchase at all. It fits perfectly in a cabinet and the drawers slide out easily. The only problem is that now that Penzey's has switched to glass instead of plastic for the smallest jars, the drawers are a bit heavier. It fits the two sizes very well. hard water stains?

I have a little item that works perfectly in preventing mineral deposits from accumulating in my stainless teakettle and has for over two years. It's a small cylinder of twisted stainless steel wire that measures an inch across and high. You keep this device in the kettle and somehow it prevents hard water stains and scale from forming. It works perfectly.

Unfortunately, I can't remember what it's called or where I got it. It probably came from either Bed, Bath and Beyond or Kitchen Collection and was displayed on the gadget walls or with the teakettles. It was inexpensive and probably cost 2 or 3 dollars. I'm sorry I can't be of more help.

Consumer Reports Investigates Exploding Pyrex

The new January, 2011 issue of Consumer Reports has a five page spread on "Glass bakeware that shatters." While they stopped short of saying not to buy the stuff, it's pretty clear that there are serious safety hazards with Pyrex and Anchor Hocking products. Cookware discussion boards have been covering this for the past few years. It's nice to see CR researching the topic too. This article is not online yet, but should be soon.

I believed the cooks who posted their experiences with shattering glassware in spite of the exhaustive denials by the manufacturers. They are still denying responsibility to the CR investigators.

To be safe, I simply quit using transparent glass for any heating applications. Good quality stoneware and porcelain have replaced Pyrex for me. With careful shopping online and in TJX stores, it wasn't that expensive.

anyone else worried about cadnium in vintage le creuset?

Personally, I'd be a lot more concerned about the concentrations of cadmium in the air and water from coal-fired power plants. Lead, mercury, and arsenic too.

French Onion Soup Bowls...?

I use the AC soup ramekin dishes. http://www.cutleryandmore.com/allclad... They come two to a package and are expensive, but for the two of us, they're perfect. No worries with the broiling the bread and cheese. Wish they were less expensive as I'd like more. Hey, Santa . . .

Another excellent recipe is from Cook's Illustrated. It takes a long time because the onions are carmelized in the oven, but there's less risk of burning that way.

Le Creuset - Midnight Blue - at Bloomies

I have two pieces of Staub in titanium purchased from Cutlery and More and I love the look. It is a dark pewter metallic finish that I find quite elegant but that's all a matter of personal preference. The graphite is a graduated color in that it's not the same intensity all over. Titanium is the same all over much like the WS and SLT dark, dark blue which I also have. It's a real pain not to be able to see the color in person. It's difficult to get a good photo of a shiny metallic object, but if you compare the photos at cutleryandmore.com you might be able to tell the difference between the two.

I might have seen the titanium at two stores in the Cincinnati-Dayton area called Cook's Wares. Call first to confirm that if you're planning to visit. I know for sure that they had the new Staub basil color there. WS sells it online only. It's a deep rich color that I may have to buy one of to add to the collection. By the way for those in the area, Cook's Wares are wonderful stores. I think they have every item in every color of LC, Staub and Emile Henry. Unfortunately, they're at least four hours away for me, but a definite stop if I'm in the area.
