Does anyone know the relationship between these 2 restaurant chains?

I am looking for recommendations of restaurants in London serving (a) fresh tofu and (b) stir fried soft shell crab (I'm not expecting them both in the same restaurant!)
Any suggestions?

We will be visiting LA from London shortly, during which my partner will be celebrating a special birthday. We only have 4 days during which I want to ensure we have some great dining experiences and visit a few nice bars as well. Any recommendations of not to be missed places for the best of Californian cuisine?
