Do you eat the...gulp...fat?

The fat is the best part. I usually trim the fat off after it cooks but before serving bc mrbuffer won't eat it. Then it becomes mine...

I'll pull the skin off chicken breasts, render it until crispy while the meat is in the oven, eat the crispy skin, and use the rendered chicken fat as a base for gravy. Waste not, want not...

What would be in your perfect picnic basket?

A good Pinot Noir, and Beck's beer for mrbuffer. Ditto on the scotch eggs. A good brie with Triscuits (and a couple Lactaid pills). Good strawberries and green grapes. Homemade fried chicken and cole slaw. Limonata for me and Dr. Pepper for mrbuffer. Coconut macaroons.

We have a picnic backpack that mrbuffer bought me for my birthday many moons ago. Has service for 2, cheese board, knife, bottle opener, and an insulated compartment. Can't do without it!

Five pounds of Italian sausage (what to do with 5 lb. of ground Italian sausage)

Stuffed peppers. Actually made them this week and they were scrumptious! Used hot sausage that dear MIL bought, raw rice, a can of diced tomatoes with onion and garlic, chopped onion and topped with shredded mozzarella. 45 minutes at 350 degrees.

Has anyone done this? I've tried the Yoplait no lactose brand but I really love Greek style yogurt. Any thoughts? Regular yogurt does me nasty...

Your favorite grilled chicken wing recipe!?!?

Call me crazy, but I am not a fan of wings that are so unbearably hot that you need a glass of ice water. I like to taste what I'm eating.

I marinade the wings in evoo, lemon juice, a little (two or three shakes) red pepper, garlic and rosemary. Grill on the Weber. When they are just about done I anoint them with Old Bay. Yum

Yes. Any raw shellfish. Tried it once. My sister eats them and although I know they are a delicacy the oysters taste like ass. Sorry. I will try the raw tuna and the crabmeat in sushi, though

Sushi. Yes, I know. Had a bad experience with wasabi (was told it was guacamole) and never tried again. However, I am gearing up to try it -- there is a place called Red Ginger in Newburgh NY that looks interesting. mrbuffer will not be accompanying me, however.

What's for Dinner #298 - Spring Fever Edition [through May 15, 2014]

Kinda chilly here in the Hudson Valley today. It's my night to do supper (long story) so I pulled out some chicken stock, browned some sweet sausage, added a mirepoix, fresh spinach, herbs de provence and sage. Added broth and will add some white beans later on. Done. Off to job fair when DMIL comes home!

Best Pizza in Clevelend?

We lucked onto Crostata's today at lunchtime and were very impressed. We're also displaced New Yorkers extremely discouraged by the dreck out here (we're in Mentor). Tony Sacco's is acceptable, too. They are at the Great Lakes Mall.

What's for Dinner #277 - the Sun Will Come Out...Eventually Edition [through February 24, 2014]

Well, mrbuffer decided he wanted tacos tonight. After browning the beef, went to get the shredded cheddar out of the freezer. No shredded cheddar. After scrounging in the refrigerator, found a small brick of white cheddar from a holiday gift basket. Went to get the salsa. No salsa. Cursed mrbuffer. Found a can of tomatoes with garlic and oregano that I keep for emergencies. Drained that, added flaked red pepper, tabasco, cumin, some cilantro from a tube I keep for guacamole, garlic and the cheese. Actually tasted better than just using salsa.

What's for Dinner #271 - The Hunkering Down Edition, Part 2 [through January 30, 2014]

We work as resident managers at a senior community outside of Cleveland so we eat with the residents when on duty, but tomorrow (Tuesday) we are off. I have a 1/4 turkey breast thawing in the refrigerator, which I will roast with cubed potatoes, onions, garlic, carrots tossed in EVOO, s&p, herbs de provence. The leftover oil will be used to christen that turkey skin that will never make it to the table! teehee :)

It's 12 degrees in Cleveland and going down down to below zero with snow. I have learned to hate the words "lake effect."

I made meatloaf (bound with raw oatmeal instead of breadcrumbs) with white rice, gravy and sautéed fresh string beans with garlic and dill.

Tomorrow is eggplant parm.

Re: Mamma Lucia's in Rockville. That's where they put tomatoes in the marsala sauce in my Chicken Marsala. I've posted about that on CH. The pizza is tolerable, but any place that puts tomatoes in the marsala sauce isn't worth it. And I'm also a transplanted New Yorker.

Freezing Lactaid milk

The Giant Eagle near me stopped carrying the quart size of the Lactaid milk I need. The half gallon will go bad before I can finish it.

Does anyone know if I can freeze it? I would buy the half gallon and freeze half of it until the other half is done.

Blue Cheese on Entrees: Am I the Only One Gagging?

The presence of blue cheese on my salad at Wendy's triggered a major tantrum (albeit after 7 hours of driving): "If I wanted mold on my F&^%$##%& salad I would have left it in the refrigerator for a month." Why do they do this? It adds nothing to the taste IMO it tastes like soap.

What's for Dinner #243 - The Start of Football Season edition! [Through Sept. 12, 2013]

Today brings my first Sunday sauce of the season, with my fresh basil and oregano from the patio pot. I did something different by processing it in the Cuisinart rather than digging out my Foley food mill, so I retain the fresh herbs and the onions/garlic.

Making meatballs to cook in the sauce for a couple hours, and mrbuffer is making manicotti (his specialty).

Done with non-hybrid tomatoes, especially grafted ones

I had a grafted tomato plant in a container on my patio this year. I also had a hybrid cherry tomato. The cherry tomato produced like gangbusters and is still going strong. I got ONE tomato off the grafted one. All the rest developed blossom end rot. Every. single. tomato. I finally got rid of it yesterday.

I thought the grafted plants were supposed to be resistant to things like that because they were grafted onto a hybrid root ball?

Which is your favorite supermarket chain, and why?

We used to live in Chelmsford and managed the retirement community on Summer St so the S&S was within walking distance, and we would only go there in an emergency. Unless it was updated since we left four years ago, it was dirty and expensive. We used to go to MB which I loved, both in Chelmsford or over the border in Nashua. Miss MB a lot.

Besides pesto with basil, what other herbs or whatnot have you used to make a similar type mix?

I've used fresh rosemary and fresh garlic to make a pesto for meats and pasta. It's wonderful. Thank God for my Cuisinart.

Where to take a former New Yorker who is missing good pizza

We lived in Rockville and I second Mamma Lucia's - but only the pizza, and it was tolerable. Went there for dinner and ordered chicken marsala and it was god-awful.

Making ice cream with Lactaid?

I've been getting and enjoying the Lactaid ice cream but before I invest in an ice cream maker, is it possible to use Lactaid milk in home ice cream recipes? just curious -- their selection is just chocolate, vanilla, strawberry, cookies and cream and butter pecan. Adequate, but I crave other stuff too!

What to you miss from your neighborhood "old school" Bakery?

Mardorf's Bakery, Haverstraw NY. Every time you walked in you would just stand there and breathe. My father used to go in every Sunday morning before 8:45 Mass and get donuts, and for me, a warm from the oven cheese danish. We'd get all our birthday cakes, christening cakes, graduation cakes and treats from Mardorf's. Unfortunately, they closed. Nothing really compares.
