Lunch treat for co-workers

nice little cheese tray with crackers--cheese is best seved at room temp. anyway--maybe a fresh fruit tray? grapes, strawberries, dates & figs can go room temp

First Time Duck

duck breasts are easy & delish----season however you like----s&p is fine---sear them skin side down in a smoking hot skillet in a little oil till there nice & dark brown & crispy--put the breasts on a pie pan or such,skin side up, in a pre-heated 500 degree oven for 10 minutes-pull out & let rest for another 10 min. & you have a nice pink medium--be sure to slice across the grain--goes great with a nice orange sauce or blackberry or raspberry sauce--cranberry relish rocks with this also-as would a nice lite stone ground mustard sauce

you can do a salad caprese---alternatley shingle tomato& fresh mozzarella slices with fat fresh basil leaves in between each-----sprinkle with virgin olive oil & cracked black pepper & a little salt--or you could just chop em up whole & freezer bag em & throw them in soups & stews over the winter

Suggest a sauce for my beef tenderloin.

In Louisville Ky. theres a sauce thats traditionally served with beef tenderloin called Henry Baines sauce--it's easily -made in a food processor ,is served room temp.--you can google it up.basically its A-1, chutney, chili sauce, worchestershire,ketchup & some versions call for pickled walnuts. it keeps for weeks in the fridge, in fact it gets better with age!
