Homemade applesauce, as many others have suggested, I'm also a big fan of Apple, Raisin & Celery Seed Slaw. Goes wonderfully with pork chops, pulled chicken sandwiches (or anything you'd normally use coleslaw for)

Casual dinner date suggestions

I make a braise-roasted chicken with root vegetables that's pretty goofproof but very delicious, but homey and comforting. I like the idea of starting off with a great soup - one of my favorites is Carrot Ginger Soup with Candied Walnuts. Again, very simple but tastes impressive without being pretentious. And you can't go wrong by finishing off with Cheesecake Brownies... Yum.

Peach Cobbler sounds like a terrific idea. We also have an Apple Slaw that's a nice deviation from a traditional slaw, as well as Root Beer Baked Beans, which are a major hit. I'd be happy to send you the recipes, if you're interested!

ISO Leek Potato soup recipe

Care Package for New Mom

Homemade applesauce in a nice secure tupperware should be fine for shipping. the granola is a wonderful idea, I make tons of homemade granola with dried fruit & nuts and it saves really beautifully. You can also make granola bars out of it too, which might make nice easy-to-grab snacks.

Depending on where she lives, you could also schedule a grocery delivery service (or a local grocer) to drop off a few must-have supplies that she may be running low on. Milk, eggs, OJ all that stuff.

And nice body washes & body lotions, calming bath products might be a nice treat. http://newlondonpharmacy.com has an entire baby section for mothers-to-be. The products are basically safe for moms & babes.

Fatty, filling bean dishes?

Just the other night I roasted tomatoes for about 50 minutes at 375 with thyme, salt & Pepper. Then I browned chicken sausage in a skillet, tossed in the tomatoes, 2 cans of cannellini beans and a splash of white wine. Sauteed everything and served it up. It was so simple and really, really tasty. I'm also married to a man with a crazy fast metabolism and this filled us both up. I haven't yet posted the recipe on my blog (next week), but can send you the full shebang ahead of time if you want it.

Most graham cracker crusted bars freeze well. Personally, I freeze my Key Lime Blackberry Bites and they hold up really well.

What are you baking these days? Part XII [old]

I've been on a major cheese cake kick including...but not limited to...Cheesecake w/Raspberry Puree; Chocolate Cheesecake; Cheesecake Brownies; and Chocolate Cream Cheese Cupcakes. And the best part is, if you forget the stupid immersion bath (and stop worrying about a few small cracks in the top) cheesecake is pretty much the easiest dessert ever.
