My favs are 1369 in Central Square, Diesel in Davis Square, and Barismo in East Arlington. I like a variety of beans for home brewing but Barismo ranks very high -- I also go for out of town beans, like Black Cat (Intelligentsia), Hair Bender (Stumptown) because they're decent and convenient to pick up.

How We Learned to Love the Pressure Cooker

Good timing: I just purchased a Kuhn Rikon manual pressure cooker, and our first test was a German recipe from Ohio childhood, pork and sauerkraut. We browned a thick 3-rib section of pork roast (just under 2 lbs,) and put it in with 2 jars of sauerkraut with a little of it's brine, 1/3 cup brown sugar, pepper, some rosemary, a good splash of riesling, and a sliced granny smith apple. In 20 minutes we had a delicious dinner, very tender and moist pork with flavors infused throughout-- a meal that usually takes me hours to prepare in a braising dutch oven. I put the results in a casserole dish, covered with foil, while I zapped quartered potatoes in a small amount of chicken broth, salt and pepper in the pressure cooker -- in ten minutes I had tender potatoes that mashed quickly to serve with the pork and sauerkraut.

Thumbs up on the slow-cooking flavors with results fast enough for after work dinner. Thumbs also up for the fantastic meld of flavors that infuse through the contained pressure.

Looking forward to more experiements.

Any good steak recipes for someone without an outdoor grill?

I like to salt the steak just a little before putting it on the grill. The salt draws up the liquid inside the meat so that the natural sugars in them really carmelize and char when they hit the very hot pan.

Boston-area gazpacho

When it' on the menu, the gazpacho at Upstairs on the Square is worth the visit in itself. The flavors are bright and intense, incrediblly fresh tasting, almost sweet but in a tomato way (not a sugar way).
