Does anyone else but me prefer, or even insist on, light roast coffee?

Black. Light roast. Drip. and DO NOT leave extra room for cream - what part of black did you not understand?

I'm a regular at many of my local coffee shops and the only chain that seems to have a light roast is the coffee shop that is in whole foods.

Why Does Ketchup on a Hot Dog Piss People Off?

I don't get how people can get riled up about someone putting ketchup on a dog. I make my own ketchup at home and depending on what type of toppings I'm going for, ketchup is perfectly suitable for it.

Though I bet half of the people who are horrified by ketchup, complaining about the added sugar, add huge scoops of sweet relish to their dog - and that stuff's DISGUSTING no matter what you put it on.

Mung Bean balls?

I remember years ago every grocery and restaurant in china town bellaire and viet town in midtown had mung bean balls. Now I can't find them ANYWHERE.

These are the perfectly round balls covered in sesame seeds and fried. I've seen plant balls that look like it but filled with red bean paste usually. the mung beans are a yellow grainy texture within the sesame covered dough. - not the dark red.

Does anyone know where I can find them?

Stop Bashing Paula Deen

Thank you for this article - all the Deen-bashers have been casing me perpetual eye roll neck strain.
I find it hard to believe theres any significant population following a recipe from their collection of paula deen cookbooks, in their paula deen cookware, and glimpsing over at their obese children while only now, with the revelation of Deen's Diabetes do they second guess their dietary choices.
Characters like Paula Deen, and other celebrity chefs intrigued me to go into a kitchen and cook - and frankly, most people with type 2 diabetes could use a lot more help getting into the kitchen and cooking.

These dogmatic health-food or anti-fat food nuts try so hard to polarize cuisine when really we should cheer on ANYONE that can get people in the kitchen longer than it takes to heat up a hot pocket. Even if its Paula Deen's butter-topia.

Don't Be a Diet Bore

So now we can't talk about politics, religion, or dietary choices? Since when has food been so taboo?
First, 'slim by spring' goes into the colleague claiming their food choice was a poor one. Not the best exchange - but it sounds like the colleague responded like a defeated child. Slim may have felt humiliated by getting put down by the friend, but clearly won the fight based upon the response.

Screw what everyone else here says. We're all commenting on a food website for pete's sake. Food should not be a taboo subject, talk about what you're eating, your diet, do what it takes to help YOU.
We need to be more open to these types of discussions. Anyone who has restricted their diet is more than aware of the grief people put on you. Theres a saying... mediocrity attacks excellence. Don't let your college's mediocrity hold you down.

Dealing with Food Hoarders

I'm no food hoarder, and I'm often on duty to make food out of what is most near spoilage. But the idea of clearing out a fridge without consent is horrible manners. Sounds like the fussing of a spoiled brat who can't accept that the people around them don't follow the same kitchen dogma as they do. Leave their old crud and be grateful you only deal with it during visits.

Boris Portnoy's Pumpkin Pie

Made a pumpkin pie using this recipe as a jumping off point.
Changes made:
- Spice mix is different. couldn't find sichuan peppercorns and I added allspice, white peppercorns, and instead of dried lemon and orange peel, i went with fresh zest. I also put aside some and added fresh ginger but ended up not using that version of the spice for my pie.
- I made a basic flaky pie dough. Butter, Flour, Water - all really cold. Its easy and I love the outcome of this crust so I didn't feel the need to use precious commodity like eggs and cornstarch (i don't think I've had cornstarch in my kitchen for years)
- Instead of a strict pumpkin filing, i made a pumpkin - sweet potato mix. I think it adds some goodness to the overall texture and it was a ratio perhaps of 5:1. I always wing proportions though.
- Went for pecans on my topping because I have a truckload in my freezer and more preferable to them anyhow.
- Didn't use a whole can of sweetened condensed milk.. just most of one.

What I learned...

- The spice mix came out really well. It makes a lot so seek other uses of the mix - now. So far, my favorite other use for it was a cheesecake.

- I will NEVER bake the whole pumpkin in that method ever again. ever again. NEVER EVER AGAIN. I had a HUGE fairy tale pumpkin and when we opened it we realized every seed had sprouted and it looked like a bundle of intestines. Clearing that mess was such a hassle. I'll pick a faster cooking method as well because the oven for all hours of the day method didn't give me a texture that made it worthwhile.

anywhere to get mai tais or scorpion bowls?

Why not try Anvil? They are big in classic cocktails but the bartenders have a whole tiki drink menu. Price is steep but the best drinks in this city.
If you want to stick to a Chinese restaurant. You may want to give kim son a shot. I had a good time at the kim son in the fountains. didn't get anything like a mai tai though.

Natural Peanut Butter Naturally Bad, Says Cook's Illustrated

I put my peanut butter in a bag and knead it before spreading. The "jar" of peanut butter has been defeated in my home. Kneading it allows you to avoid the problem of too hard, and allows you to mix it all together easily without making it a hassle.
Do I need to patent this? because justins only does it in single serving quantities - we need a larger one. cmon.

Christmas time with a broken oven

So far, the best idea we've come up with is grilling much of the larger meats. We've got a large group staying here (10) let alone who shows up on Christmas. There's also a Christmas staple of an egg casserole. Any methods to emulating an oven on the grill?
