Vodka Peppered Citrus Glazed Salmon and a Simple Mango Salsa

I made this today and it turned out FANTASTIC!! At first I thought the cumin would be overpowering in the mango salsa but it wasn't at all. Only problem was I didn't have any pepper jelly and I couldn't find any at my local supermarket so I had to find the recipe online and make it myself. Regardless it turned out delicious! Thank you SO much!

Black Pepper–Manchego Cheese Puffs

I'd like to serve these as an additional appetizer for my guests on Christmas but the rest of my meal pairs perfectly with Pinot Noir and as far as I know, Pinot Noir and manchego don't really go well together. Could I use Edam instead of Manchego or would that throw the whole thing off because of the consistency?
