Gilbert/Mesa/Chandler Area Fish Fry

It's in Tempe, but Rula Bula has good fish & chips and a good Irish pub atmosphere. I came upon this post because I too am looking for a fish fry like you'd find in the Midwest. Rula Bula will do if I can't find anywhere else authentically Midwest. It IS very good.

Turkey Trouble: Uneven Convection Roasting

This Thanksgiving I roasted our 15 lb. turkey at 325 degrees but not on the convection setting. (I had forgotten that's how I tried it last time!) Even though the thigh temp read 170 and the meat we carved up for dinner was delicious, when we went to dismantle the rest of the bird, the bottom meat was pink. It wasn't nearly as bad as when I convection roasted my last turkey. My hypothesis: Once again, towards the end of the cooking time, I had a casserole on the rack under the turkey which blocked some heat to the bird. Also, next time, I'll take it out of the brining cooler way earlier to come to room temp. It was so cold in the cooler that a hunk of ice in the brine didn't even melt, sticking to the turkey.

swensock - Maybe taking the turkey out of the cooler earlier would help and also, since only one side of the turkey was underdone, you have to rotate it halfway through roasting?

PHX Food Truck Festival - October 22nd

Luckily we got there at the beginning of the festival so we didn't have to wait in the long lines later in the evening. It was great to try out all the food trucks that I keep hearing about - favorites were the duck taco from T-licious, the mushroom taco from Carte Blanche, bite-size pies from Mama Toledo's, and the fresh offerings from Beet Street and SuperTruck from Superstition Farms. Can't beat bacon mac-n-cheese on a stick either (Duck Duck Pig). Oh and Sweet Republic's coconut sorbet was pretty much perfect, especially since it was quite warm before sunset.

Hopefully, they'll work out the kinks for future food truck festivals. There were just way too many people crammed into a small dusty dirt lot. And in order to get a beer, you had to make your way through a confusing mess: an ID check line, a 2nd line to buy drink tickets and then the insanely long line at the Four Peaks tent. A bigger venue would definitely help the chaos and maybe implementing a ticket system instead of an all-you-can-eat entrance fee. That would make patrons choosier, lines shorter and give the food trucks more incentive to deliver the goods. Though like I said before, the majority of the food we tried was worth it.

Week of Thanksgiving in Chandler w/ Parents: Very picky eater!

Jade Bar (next to Elements inside the resort) is a fantastic spot for drinks too. (Plus you can order from the full menu at the bar.) Beautiful view and really great happy hour with well-crafted drinks. Last time we went, the bartender even stepped outside to the herb garden in the middle of making my drink to pick some thyme for it.

smoked turkey?

Since moving away from the South, I regret never ordering a smoked turkey for Thanksgiving. I know it's going to be a quite a bit more difficult finding one here in Phoenix, but does anyone have any experience with ordering one here?

I do find it ironic that with all the mesquite trees around, all the mesquite flour I've seen (online) comes from South America. Especially strange that even Native Seeds' comes from South America. Maybe I should start collecting my neighbor's pods instead of just trying to keep my dog from eating them...

Phoenix Food Gifts

Answering my own question (and for the benefit of others), I just found out about a neat-sounding store in Tucson. It's called Native Seeds and it's run by a non-profit organization of the same name who works to preserve local produce and seeds. It looks like they have a ton of local products including cholla buds when they're in season and mesquite flour (which is what I'm currently looking for.)

My mind was drawing a total blank - I forgot all about Queen Creek and the others are good new tips for me.

I don't even know what to do with dried cholla buds (I had them for the first time at Kai recently), but that's a great idea. That definitely says Southwest. Where would one find cholla buds?

Now I just have to figure out if things like jelly and tapanade are considered liquids by the TSA...

Phoenix Food Gifts

I'm trying to figure out the best place to buy some (shelf-stable) food that's unique to the Southwest - something to give as a gift. I'd prefer someplace in the Southeast Valley. Is a farmers market my best bet? I'd love to check out the Phoenix Public Market sometime, but I can never find the time to schlep over there.

Can anyone recommend a great local mustard or maybe prickly pear preserves or some other local product?

first time to phoenix in july. where should i eat?

I don't know how common this is but I made reservations for Kai on Monday for Friday and the earliest we could get in was 8:30. We then had to wait an extra half hour for our table because previous diners were slow. I would have thought that a restaurant of Kai's caliber would have a better handle on timing reservations. The food was excellent though (went for the 3-course summer menu).

Hot summer specials??

Michele Laudig just reported on a few summer specials on her blog. To summarize, though her blog is most definitely worth visiting:

J&G Steakhouse has 3 courses for $38 (5-7pm).

Crudo is doing a series of three-course wine dinners for $35.

Prado has a 3-course $40 summer menu (5 and 6:30 pm).

Atlas Bistro is doing three courses for $40 and no corkage fee today and tomorrow.

Good Canolis in the valley?????

I'm not an aficionado, but I think Enzo's at the Rural & Ray intersection in Chandler makes great cannoli. Wonderful gelato and cappuccino too. The owner is Italian, fills the cannoli to order, always has Italian speakers hanging out. It's a great little neighborhood spot.

What to do with this Beef Tenderloin?

Delicious, even if some may find this a bit unrefined:

Marinate the tenderloin in French Dressing, grated onion and lemon juice.
Before throwing it into the oven, top with pats of butter.
Serve with sauteed mushrooms on the side.

Turkey Trouble: Uneven Convection Roasting

I didn't intend for the turkey to sit for an hour - it's difficult to time everything, especially when using a new oven.

The oven was set to 350 which drops down to 325 on convection. The turkey had been taken out of the cooler/brine probably an hour before I put it in the oven.

Seems like I should practice with some roast chicken on a higher rack and at a lower temperature. A convection oven can't be THAT difficult to master. Thanks for the tips!

Turkey Trouble: Uneven Convection Roasting

Yesterday we had "Thanksgiving" dinner, just for fun. I had a lovely (expensive!) pasture-raised turkey that I brined overnight and, after much deliberation about how to set the oven, roasted it on the "convection roast" setting which I hadn't used yet. I put the rack at the bottom of the oven, like the manual said, and the turkey turned all delicious-looking and golden as it cooked.

Halfway through, I had to add a casserole to the oven. I put the two dishes side-by-side in the oven. At 2 hours, my turkey thigh read 170 degrees so I took it out and it rested for an hour. So far, so good. Well, I go to cut into it and the breast looks good but once I get to the bottom of the breast, pink juices come running out! How could it have cooked so unevenly? I thought the fan in the oven was supposed to distribute the heat more evenly. Should I have put the rack up higher? Was it a mistake to put another dish in next to the turkey, blocking the air flow?

Any advice to avoid embarrassment at my next psuedo-Thanksgiving dinner party? At least the sweet potato and greens gratin was a hit!

Refrigerate Masa?

I made homemade tamales for the first time yesterday and I think they turned out well, but I had a question about the masa I used. I bought a bag of masa sin preparar and it sat on my counter for 5 days before I used it. The sell-by date was the same date that I made the tamales, so I assumed it would be okay, but it did smell a little funny. I'm wondering if I should have kept it in the refrigerator or if it's okay to leave out on the counter. It wasn't refrigerated at the store.

They do look more like lady peas. Thanks for the info! I did end up painstakingly shelling the pods that I now know I could have left whole. So now I hope that there are more this week to experiment with.

This week, my CSA bundle came with black eyed peas and I've never cooked them, let alone shelled them. I'm wondering if you can just eat the whole pod if they're young enough. It's nearly impossible to shell them and the peas inside the pods are green and about 1/3 the size of my pinkie nail!

So, I'm just not sure what to do with them. Any advice?

Just curious - what ARE your Mexican recs in this area? I'm trying to hunt down some good street tacos.

I actually just tried Classic Italian Pizza last night. Really enjoyed the roasted tomato and garlic pie and their bread. While it's not the best wood-fired thin-crust pizza I've ever had (Flat Rock Village Bakery in North Carolina), I'd definitely go back since it's so close to where I live.
