Good deal on All-Clad?

Thanks guys! I think they'll get constant use. I have a couple of cuisanart pans that may or may not be tri-ply or multiclad. They're MUCH heavier when compared to All-clad. The only downside is that the pans didn't come with lids. The 10in lacking a lid is no big deal. The 12in would certainly be more user friendly with a lid.

Good deal on All-Clad?

I was browsing in Willams-Sonoma and I stumbled upon what I thought was a great deal. I bought two Stainless frying pans. 10in and 12in respectively for $80! I was interested in the 13in french skillet, but this seems like a better value. What do you all think?

Dinner for One?

I cook for one quite often. I like to eat fish (Tilapia,Basa) fillets. You never feel stuffed and you can do so much with them. Risotto is a good solo meal. It can be augmented by many things. Roasted veggies have become a staple of single dining. You can go to your local produce mart and buy as little as you need for yourself.

I would try Tria. It's quiet and usually well lit. I;m refering to the Rittenhouse location. If you go a bit East, you may find Square 1682 in the Hotel Palomar appealing.

I have a marble mortar and pestle. It works just fine. If you need to crush/grind spices faster. get a coffee grinder.

Need to Buy A New Oven -- Rec's Please

I would look at Hotpoint. The have ranges within your budget. Your first inclination may be to dismiss the name brand, but they've scored high in a consumer report review. Check it out.

What is the best set of budget clad cookware? Tramontina? Better Homes & Gardens? Kenmore? Other?

Old doesn't always mean good. It's almost like going into a big box store. You go in to a Best But to buy a fridge. The person you encounter knows a little about several things, but isn't proficient in any one thing. If Kenmore cookware was that great, why is it you never see it sold outside of Kmart and sears? They make it so you "one stop shop" You buy a range from sears. Preferably Kenmore, then you see the Kenmore cookware and think "Why not?". As far as buying seconds go, not all that is sold at Marshalls are seconds. At least, not where I live.

I used to be a big audio/visual addict. On a trip to buy speakers, the salesman gave me a tip I'll never forget. He told me to "never buy speakers from an electronic company". I liken that nugget of advice to buyng that kenmore set. Don't buy cookware from an appliance company. Having said that, I would go to a Marshall's and piece meal my cookware. I think it can be done for $150. Get skillets in 10-12in sizes. A 3.5-4qt saucepan. A good sized saute pan and you'll be golden!

Mandolin

I just got a mandolin myself. It is a revelation! The first time I used it, I wasn't sure if it was working, but the veggies were gliding so smoothly. It sliced them without much effort. I really think its a must have.

Bread pudding

I made my first attempt at making bread pudding last night with less than stellar results. I followed the recipe to the letter. It was a recipe from "How to cook everything". After sixty minutes, the bread puddings' top was perfect, but what lied beneath was a mushy mess. Why didn't it bake properly? I set the oven at 350, but my 8 in dish in another dish of warm water. What gives? Was it me? my oven?. Any tips would be greatly appreciated.

Soggy skin on braised chicken

If you braise in a dutch oven or keep the chicken covered in some way while braising, take the lid/cover off one half hour before finishing time. I braised a chicken in milk last night and uncovering the chicken 30 mins short of its hour and a half cooking time give me crispy skin and moist chicken.

Try the Philadelphia Brew Room at 120 Market st. Good eats and drinks Another place in that area is Jones at the corner of 7th and Chestnut. I don't think you could go wrong with either.

Double oven gas range

I'm desperate to purchase a Double oven gas range. To be honest with you all, I'm not in the Viking or Bluestar purchasing demographic. I'm in the $1000-1200 Frigidaire Gallery or Maytag Gemini demographic. Even a GE profile is something I'd consider if the price is right. The aforementioned ranges all have convection ovens which is a desired feature. Any help, tips, advice would be helpful into guiding me to buy the right range.
