3 Nights in Coral Gables
Just to be safe, and because it's caused some confusion to others that I've recommended Graziano's to, there are two locations in the Gables. One is the restaurant with waiter service, etc. The other is a market/deli with counter service. You want the one on Giralda and LeJeune.
Dim Sum in Miami
Maybe the fact that the design replicates the one in London explains why Hakkassan is one of the most miserable places for lunch. They've got one of the best views of the beach and it's totally obscured by the opium den dividers. I like the place a lot, but it's so odd eating in a dark cold place knowing that the sun is completely shining outside.
Best nacatamales and ArrĂ²s negre?
The one at Sra Martinez is pretty good, but it's tiny. If you lived in spain for a while then Sra. Martinez might be good place. It's basically tapas with some traditional, some revamped (with a skew to the revamped side).
Baby-friendly special occasion restaurant
Just keep in mind that June in Miami (i) is very hot and humid and (ii) it rains pretty much every day around 4 or 5:00. If you've got a wiggly baby the heat and humidity may make him a little uncomfortable pretty quick. Other than that the recs here are great. Area 31 in the Epic hotel has outdoor seating but I haven't been in a while so can't vouch for the food.

Dim Sum in Miami
Chef Philip Ho > Pine Court. I don't know what was off about Pine Court, but something just wasn't right. After my first visit to Chef Ho I said "wow". After my first visit to Pine Court I can't recall what I said because the experience was so immemorable, from food to service. New York Mart was a different story. I thought Macchialina was going into the spot on Alton which Sylvano's left to move to Liberty Ave. or did the Sylvano's on Liberty close? If not, then it'd be too far to walk from Liberty to the beach so that's moot.

Third the rec of Indomania. You'll get your money's worth and it'll be a really unique meal that you'll remember. Also, if you're here before June, you can walk down the street to Broken Shaker, a pop up bar that's only around till then. At $11 each drinks at Broken Shaker are on the reasonable side but may be tapping out your dinner budget. But having one drink each outside on in the large garden patio area would make it a memorable evening.

Thus my "it's horrible but" description of Manolo's. Didn't know BAB had churros. Even though I haven't had them there I'd roll the dice and go for those. Manolo's are good if they're fresh, otherwise meh. Does BAB serve them fresh or do they sit out?

A bonus of the Graziano's on Bird is there is a Graziano's Market within walking distance where you can get some facturas at the bakery to go (their empanadas are also very good). There's all kinds of Argentine products to take back to Austin too. If you end up at the Gables location there's also a Graziano's Market, but a few blocks away.
If you want to go full on Argentine there's locations of Manolo in South and Mid-beach. It's horrible but if you want dulce de leche churros that's the place to go.
Also if you're looking for Argentine gelato there's Dolce Vita with locations all over the city (there's more gelato places in Miami than ice cream).
Of the places you mentioned The Knife is probably the lowest on the list.
Gulfstream Village Park in Hallandale -- any good eats?
Worse comes to worse there's The Cheese Course. It's very mellow with salads and sandwiches as well as cheese and charcuterie boards. Add a bottle of wine and you can either (i) celebrate your win or (ii) drown your sorrows.

I had to snicker a bit. You're comparing Sushi Deli to Yuga, the place that has a section called "nothing raw" on its menu and serves sushi with cream cheese?
Yuga was great when it first opened with some dishes that were new to most Miamians. But alas It was either (i) ahead of its time or (ii) suffered at the hands of the ignorant and mainstream that wanted California rolls and "nothing raw".

Kalbi (short ribs) in south florida?
You won't get LA galbi here thus the suggestion for the meat tenderizer (didn't see the video so didn't know it contained my suggestion). I'd think the best place would be an Argentine or latin butcher as this type of cut is quite common.
All this talk about kalbi is inspiring me to rip into the frozen kalbi we got on our trip to Trader Joe's in Naples. Add some sticky white rice and kimchi and I'll be stoked!
Kalbi (short ribs) in south florida?
I think you and Sam are saying the same thing that kalbi is basically flanken ribs (which are cross-cut across the bone as you describe). They may be tough to find thin so using a meat tenderizer to flatten them out may be in order. Never seen kalbi done with square cut short ribs but looks interesting.
I'd look at any market ask for flanken cut ribs. If you have an Argentinean butcher near you ask for "costillas para asado de tira" which is basically "short ribs for grilling". Good luck.
Restaurant Crawl Advice
This is a great idea and I'm sure you'll get much input.
My recs would be either some area of South Beach or the Midtown/Design District neighborhood. It's a tossup between the two as the food is better in the MDD area but the South Beach locale makes for a nicer walk.
In the Design District you have Sra Martinez for spanish tapas and great cocktails and Michael's Genuine for local American (which includes small plates) in a neighborhood that's chock full of designer furniture stores and boutique shops. Across 36th St. is Midtown which is a retail complex with chain stores but great restaurants. In that area you've got gigi (difficult to describe, best to check their website for a menu), Sugarcane (eclectic small plates) and Sustain (local/sustainable, small plates, great cocktails). Again Midtown is more of a chain retail area (Target, HomeGoods) but these restaurants make it worth a visit.
Best Sushi in Miami (South) Beach / Pubbelly Sushi?
I will throw in the mofongo at Pubbelly. After that mofongo all others will pale in comparison.
Trader Joe's coming to Sarasota.............
Drove to the Naples location from Miami the weekend it opened. Bought tons of stuff, much of it refrigerated or frozen. Took a couple of coolers and after checking out at TJ's went to a nearby Walgreens and filled them up with ice. I intentionally bought some ice cream sandwiches (S'mores flavored that were delicious!) to test if things got too warm. Aside from the ice cream sandiwches slightly melting (as much as they would had I driven home from Publix with them) everything made it fine. Even arugula and pea shoots made it OK (the produces is a steal compared to Publix and there's items like blood oranges and meyer lemons that Publix doesn't even carry. I hate Publix). We've been enjoying the black bean taquitos and mango mochi for a few weeks now. Time to make another run soon!
Shake Shack SOBE's Vice Crispy Concrete is very good
Tried both over the weekend. The concrete special was the clear winner. Also picked up a pint of the maple bacon bananza. Only gripe with concrete was that the addition of bananas seemed superfluous - you've already got caramel, salt and chocolate, no need for banana. As for the maple bacon bananza, it's very odd. You can distinctly taste the maple, the bacon and, unfortunately again, banana, but they don't seem to meld together. In full disclosure I hate bananas.
