"Dear Abby: I eat my dessert first.

So, if the table next to you is having their steak while you're eating dessert, that's also a problem?

I also understand that it's your thing, but I never, ever order my food with the caveat that everyone else at the table will be taking bites and to order accordingly.

"Dear Abby: I eat my dessert first.

Oh, I get so tired of fake etiquette and conventions for their own sake. Let her eat as many desserts as she wants in whatever order she wants!

She's not harming anyone. She's not taunting anyone. She's not being rude or mean or petty - she's just eating dessert first. I say, why not.

NEW: 3 Potato 4 in SF - who's tried it?

I have no answer for you, but I am glad that more businesses are opening up on that stretch of Market.

Third. I've used several, maybe up to a dozen, recipes over the years and have never been satisfied. They're always bland, pale, and dense. Granted, some of that could be user error.

But, I'd love something light and yeasty and buttery! And maybe a bit foolproof w/o a lot of last minute fussing, seeing as how it's the last thing to go in the oven.

Something brighter (that isn't a last minute add to retain color). The stuffing has herbs, including parsley, but they cook down to a dull, dark green shade. Barely different from all the brown, really.

I received the BEST compliment yesterday.....

I used to run a knife around the edges after I took it out of the oven (and it rested for a few minutes).

Now I don't even do that; I just insert a strip of parchment paper around the inner sides of my pan, right after I lay down the parchment base.

I've never had a cheesecake crack and mine cools on the counter.

Turkey Day 2013: Lessons Learned

Second dinner is over and the major thing I learned is that using a flour and water slurry makes perfectly delicious gravy.

I didn't get around to making a roux, so when I took the turkey out of the pan to rest, I just scraped up the bits into the really good drippings, poured my homemade stock into the pan, set it to low heat, and dribbled in the slurry as I whisked. Since I didn't remove the fat, the end result was pretty much the same. I let it cook a bit longer to cook off any raw flour taste, season to taste, and voila, an excellent, dark gravy.

Major miss is that I'm pretty sure I forgot to put salt in my quick drop biscuit/roll things. I can't be positive but they tasted a little off and I don't remember adding the salt.

I overcooked my bird a little, but I'd stuffed so many aromatics in the cavity, I thought I may need to compensate as though it was a bread stuffing. Turns out, I did not!

I want to think up a way to add some green to my stuffing. It tastes delicious but the big pan of brown just bums me out a little. Something that stays green - not sure there is such a thing that also goes with turkey.

Makes you think about just how much bread goes into a, for example, breaded chicken breast. Probably several slices of bread worth!

Put that breaded chicken breast on a bun and wow. That's a lot of bread.

Isn't it sad that someone is so used to being mean that even their real compliments sound a little rude?

But, that being said, yay for your great mashed potatoes!

Turkey Day 2013: Lessons Learned

I did that once! I was making a giant pot of black beans and rice (to be portioned out for work lunches) and thought I should put use the whole can.

Yeah, no. I ended up having to do lots of tinkering to make each bowl and tupperware container full palatable to me.

Yup. It's weird that it basically reverts if you cook it too long.

How Too Cook Everything.....Badly?

I don't think he actually likes food very much. Perhaps, at heart, he's a "food is fuel" type.

I think his recipes are boring as hell, too. I gave away my copy long ago (and used it as a couch prop for awhile before that) so can't remember the few things I made, but I was underwhelmed across the board.

Here you go. I served it plain, so people could just slice off a piece and eat it by hand as they walk and talk.

BUT, I'd love to serve it with roasted peaches or a sour cherry compote. I'm also considering using it for the pear upside down cake I make.

Typical American Thanksgiving meal: All show, no substance.

Friends or family, I've never had a meal as bad as that as Thanksgiving. This is, unfortunately, your bad luck.

But, as someone else asked, what did you make/bring?

Turkey Day 2013: Lessons Learned

I only brought desserts to my sister's house but had a few hits and one miss. Hits include French silk pie (though the recipe called for 4 oz bittersweet or semisweet. I used semisweet and ending up doubling the amount of chocolate.) and an absolutely perfect almond cake - the Chez Panisse recipe. That cake is easy peasy and just delicious.

My miss was a pecan pie. I hate pecan pie goo so I was trying to improvise as I made it and added lots more pecans than the recipe calls for. Well, it was tasty but super hard to cut. Will have to come up with a different pie method to achieve that.

I'm prepping for Thanksgiving Part Two, Electric Boogaloo, that will be at my place tomorrow, so will have more feedback on Sunday!

Do you shop at Aldi's?

If you do need extra bags, the mid range plastic bag they sell is super strong and only 10 cents. I actually deliberately buy some for other uses in my house!

Rational? Rational.

You use that word, but I don't think it means what you think it means.

Why does my deli turkey meat look like a sieve?

Heh - my cat won't eat subpar deli, either! She adores Krakus Polish ham and will beg incessantly for it if I'm eating some. A cheaper brand of deli ham? She turns up her little nose.

Why does my deli turkey meat look like a sieve?

Oh, yes! I once ordered a turkey and avocado sandwich (to go) at a cafe. Got back to my office and the turkey was pretty much this same squishy stuff you have and the avocado was just the faintest smear of green on the top half of the roll.

Gah.
