Self-Rising Flour

self-rising flour has salt and baking powder in it - hence "self-rising" it is used for some quick breads and biscuits.

Recipe Software [Moved from Home Cooking board]

I have Big Oven - you download it and get updates for free with the deluxe version. I used the basic program for about a year and then upgraded to deluxe. I really like it.

PX in Old Town

You can call ahead and make reservations. We showed up unannounced and they still let us in. It's a fun and quirky place to go. I'd encourage you to order one of the special drinks. I ordered some time of a ginger drink and he had made his own ginger ale! It was strong, but delish! Definately a place to sip, not chug!

Converting this recipe from apple to peach?

You could add some cornstarch to the fruit to help thicken it.

Pacific Restaurant in Sterling, VA?

I haven't been there is a few years, but it was great! Don't do the weekend brunch though, the food wasn't good buffet style. If the weather is good, ask to eat outside, they've landscaped beautifully and you'd never know you were right of route 7!

Zwiebelkuchen - Whole wheat modification?

Have you thought about using White Whole Wheat flour or whole wheat pastry flour?

This brings back such good memories of making this when we were stationed in Germany 23 years ago. The German wife of a soldier made it for us and gave me the recipe. Really good!

I've enjoyed BigOven. It's pretty easy to use. The support is good and you can download a trial. I bought the basic and a few month later upgraded to the Deluxe. Just google it.

How to jazz up cottage cheese?

I lost 35 pounds in 2006 and my breakfast is to take one apple, cup up and microwaved for 1 minute. Sprinke 1/2 t cinnamon over the apple and mix in 1 cup 1% cottage cheese. If you get enough protein in your breakfast, with a little healthy fat - it should hold you till lunch. I've maintained my wait since the day before Thanksgiving.

BTW: I went on a cruise in Dec and was able to have this every morning. I saved my calories for dinner with dessert!

Dried Buttermilk and Dried Milk - any difference?

I've been using dried buttermilk for years with no problems. I only use buttermilk for baking so I really don't like to have to buy fresh and then waste it.

Can you help me avoid a bundt cake disaster?

It might help to use a pastry brush to apply the shortening, that way you can get every surface. Also, don't use butter, I hear it has a greater tendency to stick. I have some friends who collect bundt pans and they swear by bakers secret.

Soft, moist homebaked bread that stays that way (especially sweet dough) - am I asking too much?

are you incorporating too much flour? The dough should be moist, but not wet. Also, perhaps if you pulled them out of the oven a few minutes earlier.

Pie dough: favorite recipe and kneading technique?

One more hint: Lay the dough into the pie pan, but do not stretch it. If you stretch it it shrinks back when baking.
