German Chocolate Cake

I also have never made a German Chocolate Cake with buttercream frosting. Usually the filling/frosting is made with condensed milk and is like dulce de leche with coconut and toasted pecans. Make a darker chocolate cake and really cook the condensed milk down and you have a more "adult" version that has that nice burnt sugar flavor that a lot of us love.

Korean Kimchi Tofu Soup (Soondubu Jjigae)

soondubu jigae doesn't have kimchee in it...this is like soondubu jigae and kimchee jigae had a baby. Also where's the meat??? Soondubu usually has all kinds of stuff in it, like beef and/or seafood. I'm not saying this isn't tasty (it is), but don't call it soondubu.

Dinner in Topeka?

I think Globe Indian is quite good, especially the Biryani and their Onion Pakoras. I also think it's better than India Palace in Lawrence. If you are willing to go to Lawrence, and you want good wine and good service I suggest 715 or Pachamamas. Both are solid. 715 does all their charcuterie in house, and i have yet to have a mediocre meal there. Pachamama's is a little more upscale and has an amazing wine list.

The Diss, Updated: Calling Asian Food "Hipster"

" To call it some "hipster" phenomenon minimizes it and puts it on par with a social subculture most people roll their eyes at. " TOTALLY AGREE!

Minimizing it with the label "hipster" enables them to "digest" (if you will) this group of young chefs easily while at the same time marginalizing them and keeping their (food critics/establishment) bullshit food hierarchy ("west is best") stable.

Pfeffernüsse (German Spice Cookies)

NO MOLASSES, BRANDY, OR ANISE SEED?! These aren't like my old German Pfeffernüsse recipe...try the one in the old Joy of Cooking, it rests over night and makes delightful little cakes, because these are more cake than cookie.

With all that honey, I bet these turn out more like Lebkuchen.

DIY or Buy? Urban Homesteaders Weigh the Costs

Homemade pizza is 100% worth it in Manhattan, KS. There is only ONE pizza place that isn't a chain, and it's really only good when my friends behind the counter are making it (pizza noobs always screw up sauce/topping/dough ratios). My favorite pizza is the stuff my dad makes. He's a true breadmaking-vet and his crust is amazing. It takes him about 4 hours from start to finish to make 4-5 pizzas (we do only have one oven). It's pizza dough, not sourdough, so what's up with the 24 hr crap?

Why Does Regular Dish Soap Work Better Than the Ecofriendly Stuff?

This article sucks. It starts with a completely bullshit thesis, is poorly organized, and i second rockfish42's comment. COOK'S ILLUSTRATED ALREADY DID A TEST. Now granted it's not the be all end all of tests, but I trust them with consumer quasi-science. Also, my Method soap cleans just as good as the Palmolive my roommates use, and the Method smells so good it makes me WANT to clean my dishes.

The Worst Paragraph in All of 2011's Food Writing

That last sentence is the best IMO, because it slams Julie and Julia and doesn't take away Meryl Streep.

The White Castle Slider and Other Dark Moments in Burger History

Steamed meat can be delicious (Shumai anyone?). And there are plenty of burger joints that do sliders (I'm not talking about mini-burgers, that's a different beast), and do them right. Like Cozy Inn Burgers, delicious little sliders, and housemade potato chips = win.

Is Five Guys Really the Best Fast-Food Chain?

We just got a SmashBurger here in Manhattan, KS (that's 2 hours west of Kansas City, and home to Kansas State University, for those not familiar with the area) and i was really underwhelmed. Granted I'm spoiled by the burgers at the Burger Stand in Lawrence, KS; but I'll take the local Cozy Inn Burger (delicious little sliders with handmade potato chips instead of fries) over anything else in town.

Burger Stand:

I did have an In-N-Out Burger while i was in Santa Rosa, CA this summer, and it was pretty tasty, but the fries weren't that great IMO.

Oatmeal Is the New Cheeseburger

SO MUCH SUGAR! I put 1 tbsp of brown sugar in my bowl of oatmeal, and that's 12g of sugar. And i bet they're all the quick cooking mushy kind instead of the nice chewy whole oats. bleh.

the Best Canned Tuna?

I swear by Island Trollers Inc.
My mom lives up in Anacortes, WA and when she comes down to visit me in Kansas, she always brings a couple of tins. It's absolutely delicious and the garlic and habanero varieties are good straight out of the can.

They aren't packed in water or oil, but go through a process called raw packing. All that's in the can is the tuna and a bit of the juices leftover from cooking it in the cans. At least, I believe that's what they do.

Natural Peanut Butter Naturally Bad, Says Cook's Illustrated

Lol I'm surprised they didn't pick Peter Pan! I love Maranatha's No Stir Organic Crunchy Peanut Butter. I would love to try Trader Joe's, but there isn't one in my area (Northeastern Kansas) :(
