Chocolate and Sea Salt Recipes

I just returned from a visit to Napa Valley, CA last week and had the most amazing Dark Chocolate Bar with Sea Salt. Who knew that Chocolate and salt would taste so good together. Since my return, I've been craving the two flavors. Does anyone have any interesting recipes they would care to share with both the Chocolate and the Salt? I had a brownie recipe clipped at one time, but cannot locate it. :(

Food Quests

The perfect Carnita's. The best I've had was at a Mexican restaurant in the Rio at Las Vegas. Crispy on the outside, fall apart on the inside.
I finally got the courage to call and see if they would give me the recipe...but they are now CLOSED!!! Hopefully some day I will find a recipe close.

Turkey-Day Hits and Misses

Realized after I put the Turkey in the oven that I forgot to get the Giblets, no Giblets for the Giblet gravy. I just chopped some dark meat and added it instead. No one knew the difference. It was a great Thanksgiving overall!!!

Help...Chef's knife bit the dust...

So, my hubby pointed out while doing the dishes, that my Chef's knife had a big chip out of it. It wasn't an expensive one, Faberware I think. I'm ready to invest in a good one. I use it mainly for chopping veggies,

What brand do you recommend, and what model?? Also, where do you buy online? Where I live there is no place close that sells them so I will have to buy online.

Your top three "must-have" stuffing ingred's

Lots of onions, celery, mushrooms, bread and crackers, sage, thyme, marjoram, garlic. I also make mine in the slow cooker. It frees up the oven and is delicious!!

Question about cooking with Wine

When a recipe calls for white wine....what type of wine do you use? I know you are supposed to not cook with anything that you wouldn't drink yourself, however, I don't drink white wine. Are you supposed to use a Chardonnay, Pinot, Grigio or does it make a difference? With all your good advice....I RAN out and bought Marcella Hazan's Essentials book and want to tackle the Bolognese sauce this weekend.

Baking for a crowd...what to send it in and recipes...

Hello everyone....My husband is wanting to do something for his teachers that work for him at his school. He suggested baking a variety of things. Does anyone have ANY idea what I can use to put the variety of goods in so it's individual for them. At one time I thought I saw a thread that had individual gift containers to send it in.

Also, any recipe suggestions??? My thoughts, 7 layer bars, Doubletree Cookies (my fav) goey butter bars. I want something to WOW them.

Help!!....Alton's Mac & Cheese

Thanks....I used table mustard. It was great.....given the great reviews on previous posts and this was the first time I made it. Husband said it was just ok.....he's a fan of the box kind....ugh.

I was hoping to make Alton's recipe for mac and cheese tonight, however, I just found out I do not have any dry mustard.

Can I leave it out? The only thing I have for substitution would be table mustard or mustard seed.

What do you think??? Thanks.

Mother's or Grandmother's treasured passed down recipe....

Hey everyone...just curious to see what your most treasured passed down recipe was.

Here's mine...

Mother's (very simple)
Sloppy Joes
1 1/2 lbs ground beef
1 small onion
1 tbsp mustard
1 tbsp vinegar
3/4 cup ketchup
1/4 cup bbq sauce
1 tbsp sugar

Cook meat and onion....drain. Add all other ingredients and let simmer for 20 minutes. Also great as a dip with chips. During the summer my parents ran the ballparks. My mother always served these at the concessions and it was the first to go. Very simple and quick to make. Everyone always ask for the recipe.

Cheese spaghetti (Goes with Roast)
Spaghetti Noodles
Velveeta Cheese
Chili powder
Garlic salt
Juice from Roast

Cook spaghetti...drain. Return to pot and low heat. Add cheese, chili powder, garlic, pepper, and roast from juice to taste. The key is the roast juice. Most people put milk in mac and cheese, the juice simply makes it. I never had the privilege of meeting my grandmother as she passed before I was born, however, you could always count on this with every roast made.

Food Saver: liquids

I freeze and foodsave the soups all the time. I buy the cheap tin foil baking tins, pour the soup into the size servings I need, and freeze them on a cookie sheet in the freezer. Once frozen, I place the entire baking tin in the foodsaver bag, or sometimes I pop out the soup and then vacuum. I'm not aware of an easier way. Love my foodsaver though!!!

I know this thread is about cookware, however, I am on the search for some nice serveware such as serving bowls, dip bowls, platters, etc that have hand painted designs, not plain... (similar to the ones used on food network, paula deen, racheal ray, etc...)

Need help with my Salsa recipe.....

Hello everyone....I have been trying to perfect a Salsa recipe and am having trouble. Wanted to see if anyone could help with their own recipe or suggest what I am missing. I like my salsa very cilantro and garlic tasting. Here is what I am using....any suggestions or recipes out there?? Thanks for your help

appetizers for men

Chicken Jalapeno Poppers:
Peppered bacon cut in half
sliced chunks of jalapeno pepper
boneless chicken chunks
garlic powder
Season the chicken, place the jalapeno chunk over and wrap in the bacon. Either bake or grill.

Meat Loaf Lightener

Just a tip.....I put two slices of bread in the bottom of my loaf pan. this keeps the grease from sitting on top of the meatloaf. When you pull it out of the pan, the bread seperates from the meatloaf.
