How We Learned to Love the Pressure Cooker

I just pulled my Fagor pressure cooker out last week -- after sitting in the kitchen shelf for about a year. I decided to cook a pork shoulder. I had 11 # of it... so one night I cut off 4 lbs of it and did an Asian style -- see Ming Tsai's recipe, just Google it. Came out great and none left 2 days later. For the rest of it, I cooked it Mexican style and after 70 min, it was delicious and tender. With the broth that was left in the pot, I pressure cooked a pound of black beans for about 35 minutes. Pretty remarkable -- I can't believe I hadn't done this before. BTW -- pressure cooking black eyed peas is a snap. Love it for that! Thank you for your article -- love this information!

Chocolate Ganache Tart

Wow, it's rich but good -- I doubled the crust and spread the dough out on a 10.5 inch pan. My husband loved it just the way it came out -- bittersweet with a nice cookie crust. I'm not a huge fan of bittersweet chocolate -- so I microwave it on Power 5 for about a minute and a half and add vanilla ice cream to it. OMG, I am SO in heaven!!
