Hi there, I'm looking for food/beverage suggestions in the greater seattle area near greenlake. We're going to be there for three days and three nights. My friend is from Seattle and I've been there a bunch so I'd prefer to avoid the touristy places. I'm also going on a budget. I can't go big every night and frankly I'd prefer to keep myself budgeted to less than 50 dollars a day if possible. I'm interested in trying out foodtrucks or hole in the wall places serving anything tasty, flavorful and inexpensive (pho for example). I have no problem eating ice cream for lunch or pancakes for dinner etc. Just give me suggestions and I'll fit them into my schedule.

Musts:

-I'd like to get seafood/oysters one night.
-I drink coffee every day and I like to start each day with a new, unusual and spectacular cup of coffee
-Try any local specialties
-Speakeasy type bar focused on specialty cocktails
-Farmers market or something equivalent to make dinner from

NY CHOW Report: Neapolitan-Style Pizza at Forcella

I found their pizza far below average. I had the Montanara. The dough was undercooked and thus with the tomatoes the whole thing was a soggy mess.

Dry is there. I've also added Yamakazi 12 year old scotch, Glenfiddich 12 and merachino cherries for those of you keeping score. This bar is pretty much tapped out. I'm out of space and very happy with the result. Please let me know if anyone has a must try alcohol.

Hi Bkeats,

Thank you for your lengthy and thorough response. I'll try to respond to your questions in order. I am a HUGE cocktail and wine drinker. I have something with dinner almost every night. This bar is really just for me and a few lucky friends (I live in a studio apt). I am not including wine or cordials or after dinner drinks in my cocktail bar total. I consider these separate entities. Thus far I have gotten:

-Tito's Vodka- 25
-Some french gin (can't remember the name because i'm at my girlfriend's apartment). Will post later. - 36
-Lemoncello -18
-St Germain -35
-Bloody Mary Mix -8
-Mint Simple Syrup-8
-15 year old scotch is being donated curtesy of my father's trip.- free

Spirit Total is about 130 thus far.

I also purchased some hardware like a jigger, shaker, zester, 11in stirring spoon, larger ice cube tray (for less melt), strainer and muddler for about 100 all in.

I'm about halfway ($230) to my total budget of 450 and I think I'm doing alright. I know I'm probably going to need a tequila and rum (any suggestions?), bitters (maybe 80 or so?) and some mixers (to be purchased when I'm having people over). Hardware is taken care of and most of the liquor is set. Any other thoughts/suggestions/comments? Do you have a go to cocktail book?

Hi there. I am trying to start my first “real” cocktail bar. I need suggestions for the various spirits, hardware, seminal texts and bitters/anything else I should have on hand. I am trying to keep the budget under 4-500 dollars all in. I would like to focus on artisan and low production spirits and bitters that emphasize quality and craftsmanship (and hopefully value) over marketing panache. Tito’s vodka comes to mind as an example. I would also prefer local (Brooklyn/tri state area if possible), but that is not essential.

Spirits:

I imagine I will need a rum, vodka, whiskey, tequila and bourbon. What am I missing?

Hardware:

Some kind of muddling instrument, martini set, stirring sticks…I’m really not sure.

Texts:

No idea

Misc:

Straws, salt for rimming glasses etc. Taking suggestions.

I'm sure there was someone that could have been chosen as a loser regardless of how slim the margin was. They were intending on sending four people the finals and ended up sending five. Dale and Angelo are out. Carla and Antonia are still in. You sure this is "top" chef and not "lucky" chef? Or fan favorite chef? Not to mention the fact that Mike skated by this entire episode on the ideas/skills of Blaze and Tiffany. I can't believe he just took credit for coating the shrimp with grits/lobster sauce and didn't say sorry to Richard. "If it were his dish, he would have made it." "Thanks for the 5 grand." I thought I liked mike despite his loud personality; but he's turned out to be a sore loser, a sore winner and a plagiarizer. I still think he's more talented than Carla or Antonia.

I grew up with access to Anna's Taqueria and I LOVE their burritos. I moved to NYC two years ago and I am yet to find a suitable replacement. The biggest differences I've found are the chicken stock flavor in the rice and meats. Has anyone found an anna's burrito surrogate?

I CONCEDE the point on the origin and meaning of tipping. MY BAD. However, I'm not going to pay the bartender more because he's checking on other people behind me, keeping other people's drinks fresh, drunk nanny, food prep for something i'm not ordering or anything else that does not DIRECTLY impact the service of MY meal. I get it's a hard gig with lots of people in a more rushed atmosphere, but they also get the same percentage on drink order for much less effort. For example I order two beers, he pops the top on each and puts them in front of me. 8 bucks and I give him 10. A dollar a drink. That's 100 bucks an hr at that rate.

I get at this point that what I learned about the acronym is wrong but commonly wrong. More people associate TIPS with "to insure proper service" than its 17th century origin. The fact that the tip is at the end doesn't not "insure" but "motivates" services to do their best so that they may be rewarded. If you give them a whopper tip at the beginning and say "take care of us," they may, they may not. There's nothing motivating them now that they have your money in hand.
