For those who love offals, which are your favorite?

Thanks for the reply. Asian restaurants here in California are the best places to get offals. Otherwise we are for the most part, Indian and Nepalese restaurants not to be excluded, denied the pleasures of so many foods you have available to you. Good eating!

I know lungs are out, having had mine in Munich, but the rest might be available. This is most likely the wrong board for the question but I had to ask.

Life doesn't get much better than that. I had it stored since release and it had everything you could want out of a Rhone. The color was perfect and it opened in the glass and kept opening throughout the meal.

I live in Los Angeles a San Francisco expatriate. A Dr. friend of mine recently regaled me with the story of how patients come to her office seeking drugs and when refused threaten to write bad reviews on Yelp and other forms of social media which can be devastating to one's practice even if untrue. When passing that story on to a restaurant owner I was told the same is true in the restaurant business when people, with cell phone in hand, say pick up the tab or I am writing a bad review on Yelp. I guess that the same threat could be made of a bad review on Chowhound.

I've always been content in the knowledge that the reviews on Chowhound are the reviews written by serious commentators and not those of extortionists.

The question posed is, Is there any way of insuring against the reviews of the extortionist? I suggest there is not. The destruction value of social media knows no limits. It's a whole new world.

The reviews here are pretty consistent with those that I've experienced in the Los Angeles version of this restaurant. For a reading treat, however, I invite you to read the comments on Yelp for the Los Angeles restaurant where a patron got in to a fight with ownership. Very interesting.

Carter, I considered the fact that you had been treated poorly at Bistro Provence but had never tasted the food. I thus tread upon their ground and was thrilled by the good food. No lamb shank but outstanding lamb chops and corkage for my 1989 La Chappelle Hermitage by Jaboulet was $18 and well worth it. I highly recommend this restaurant to you and suggest you let bygones be bygones.

Thanks Carter. As usual you are right on top of the restaurants in Los Angeles. I was going to say in the Valley but then I thought, Hell No, this man is knowledgeable about all of Los Angeles.

With the foregoing in mind, anything close to the Valley with the same food choices you might recommend? I was giving some thought to Carlito's Gardel but haven't checked their menu yet.

Really. It was a work night I was tired and I had no time to put up with their nonsense. They had a bad attitude. But it seems they have a reputation for doing this and I was not the first customer it happened to. I have since confirmed this. Maybe management should have better trained their staff than expecting me to do it for them. So those of you who feel it is acceptable to put up with that are welcome to go there.

With this day and age technology I'm sure you can find the menu from the Empress of China on Grant Ave. Talk about old school that would be it. Both the place and the dish. I love to go there, a double scotch and potstickers and then move on to a dinner including the almond duck. I love that double scotch and Chines apps. most anywhere but with the view and the kitschy old bar at Empress it' a destination point. As for L.A. and almond duck, nada.

Some things are memorable Tony, and when it is a place where in the middle of the night you went to get your wife a piece of that banana cream pie, your more apt to remember. Especially when the wife loved the pie. I also introduced my wife to the honey walnut prawns at that restaurant. We have been back several times since the first.

Le Petit is under consideration having a lot of great dishes that go with 1989 Burgundy or some early 90's Rhone wines. I haven't been to Chablis and will check that out. I would value your opinion on Bistro Provence in Burbank. Knowing you, you know the place and I know you know the wines.

You are absolutely correct Servorg. As I walked in to find out what had happened I just as quickly walked out telling them "You're not the only Mexican Restaurant in the valley". This was about three years ago and I have not returned.

Not an unusual story and not all that unusual for a restaurant to do. WRONG mind you but not unusual. I had the same incident at Casa Vega in Studio City, when my Daughter told the hostess I was only parking the car (with their parking lot valet), and my daughter, wife and son were there. The hostess did not seat my waiting family and instead put us to the bottom of the list. I also left the restaurant and never to return.

Well certainly the sweet and sour almond duck. My second pick would be the honey walnut prawns and if it's two of you leave space for the best banana cream pie you have every put in your mouth.

Canton City should be ashamed of itself. The duck is horrible. Paul's Kitchen is passable as is the club house in Beverly Hills, Joss, which shows itself as a "small exclusive version" (excuse me). Short of going to Sacrament, Frank Fat's or the few places that still serve it in San Francisco, there simply is nothing in Los Angeles.

Duh! Now that you say Grand Central Market I can pair it up with Valerie. A great bakery and confectionary. Had no idea they did a Monte Cristo or some take off on a Monte Cristo. Worth trekking back down there.

what do you do with beef shanks?

6 - 8 meaty beef shanks

combine Blend In
1 qt marinara 1 bayleaf
2 cans tomato paste dash of cinnamon
1 minced onion dash of nutmeg
1 chopped bell pepper dash of clove
1 sm can diced tomatoes black pepper
chopped parsley Zinfandel to thin
10 quartered dry apricots
6 cloves chopped garlic

Pour sauce over shanks (I like to pour some on the bottom of the large pot and then all over the top of the shanks). Bake covered @ 225 for four hours. Add mushrooms (optional) and cook one hour more. Serve over pasta or rice.

I can't get too much more specific that that. In addition to the pasta or rice some San Francisco Sourdough would not be wasted.

This is not the way it looked on the screen when I typed it. The spices are mixed together and then added to the sauce before pouring it over the beef.

There's just nothing like it today. Blums was a remarkable place. The Emerald Isle and the Chantilly cake two wonderful experiences.

Where can I buy ANDOUILLE SAUSAGE???
