Shabbat afternoon snacks- any ideas?

I agree with all these great ideas or you could more of an Italian Antipast without the cheese or meat -

If you go with mezze and what crackers I think you can do pita chips without a motzi issue or you can buy Triscuits.

Healthy alternatives to honey for use in granola bars.

I have heard that ground flaxseed is a great egg replacer. I also find chickpea flour with a bit of water gets very sticky and binds well for pan frying things, it might work for baking, but it is usally better in savory food as the taste is a little weird for sweet.

Cholent for Pesach

I tried it last year (but I made it in the oven). It was really delicious. I used qunioa, Mushrooms and Meat in addition to poatoes and you can try different kinds of root vegetables. It is fine withou the beans. Enjoy.

Passover side dishes

any sort of roasted roots works great, you can even throw in some chestnuts. Or you can use Spaghetti squash for a nice change, either just sauteed with garlic or mixed with egg and baked in muffin tins as a squasherole.

Vegetarian Passover recipes

I like making portabello mushrooms a main course for vegetarians on passover. You can simply grill with balsamic vinegar or stuff with spinach or a pesto or use your imagination. It works for all types of vegetarians and is substantial and meaty.

Hottest Kosher Food

I see your point, but I don't think it is any more embarrassing than when SUSHI turned out to be the "hottest" kosher food a couple of years ago (about a decade after the rest of America discovered it). I also am getting a little tired of seeing short ribs... on every menu. If that is progress, pass the cholent.

Cholent is retro. It is our original contribution to the culinary world and I am interested in seeing exactly where this ancient dish is going to go now that people are starting to get creative or digging deep into some classic family recipes or exotic Sephardi varieties.

And don't be surprised if we are on this board talking about gefilte fish this time next year...

I would also recommend my favorite, Lemon Lamb Cholent with spinach, chickpea, rice, lamb, chicken and lemon juice - it has tremendous Umami.

Quinoa May Require Special Kosher for Passover Certification

In the past I had heard that we just had to buy it before Pesach so that if there was any tiny amount of Chametz it would be nullified. I hope we can find Kosher for Passover quinoa.

Cabot's Cheddar

I second the Cabot Cheddar, it is one of the best kosher cheddars I have had. I also love 5spoke and I think they are not really comparable, even though they are both cheddars they taste very different. I love them both in their own way and Cabot usually comes out with their OU line for Passover. I spoke with someone there who said if they could prove more demand they would make more. Wish they would just make their whole line OU, it is so easy to find, it would make it so easy to get kosher cheese all over the US.

P.S. My favoirte cheese of the moment is a Pecorino I found a few months ago, not easy to find kosher so I am eating it sparingly.

Mishloach Manot

I have tried some of Zelda's baked goods and they are fabulous, so I am sure they would make great baskets. There is also a company in NY called KosherLine.com that does higher end stuff and they are creative, check them out too.

Hot Chocolate

I have searched for a good hot chocolate and found Godiva to be pretty good, but then I discovered the one from Trader Joe's which was less expensive and less calories and still really rich and chocolaty - it is calling Sipping Chocolate, but I think they only sell it in the winter.

I also just discovered Taza, I am trying to get them to offer a giveaway soon, but I then just found them in Fairway - but they are not powder, they come in a round chocolate bar for eating or drinking and have interesting flavors like Vanilla Bean and a Spiced one.

New York for Shabbat

The UWS is probably the only place this will actually work, the choice of Darna, Talias and PrimeKo for Friday night and then Chabad is usually the best place for a cholent kiddush. I am always surprised that more restaurants in the midtown area don't offer a prepay for tourists and suburbians to spend Shabbat in the city.

Good Kosher Indian Recipes:

Here is a Chicken Tikka Masala Recipe given to me by the chef from Shalom Bombay

* 5 Tbs Oil
* 2 Medium Onions (chopped)
* 1 Tomato (chopped)
* Salt (1 Tsp)
* 1 Tablespoon Each of Coriander Powder, Red Chili Powder, Paprika
* 1 Tablespoon Fresh Ginger and Garlic paste (ground into a combined paste)
* 1 Tablespoon of Egg Shade or Orange Color Food coloring
* 3 boneless chicken breasts cubed
* 3 Tablespoons of Non Dairy Creamer
* 1 Cup Water

Directions
1 Heat Oil in Large Skillet. Brown Onions, Add Tomato and simmer for 5 minutes. Add Salt, red chile powder, paprika, coriander powder, and garlic/ginger paste. Simmer for 5 minutes.
2 Add 1 cup of water and food coloring. Add Chicken pieces, cook for 10 minutes, cdd Non Dairy Creamer and cook for 2-3 minutes.
3 Serve with Basmati rice.

Morningstar...a non kosher transition?

I only hope this is not the beginning of a trend for them, but while we are writing, maybe we can convince Gardein to get a Hechsher too, it was started by the guy who made Yves, so I am not sure what is stopping them.

As for other options, you can try and make your own Seitan, it is a bit of work, but you can make it ahead and then cut into strips and flavor how ever you want.

Anybody go to Kosherfest?

I will be doing my official write up closer to the end of December, but it is funny readin the comment below to see that I was interested in so many different products.

The highlights for me was to see so many Israeli products making their way into the marketplace. I loved the wine infused preserves made by Tishbi and this new ice cream and sorbet from La Lune.

As for the sausages, they were excellent, but there were actualy two new sausage companies, Jack's had excellend flavor and will be in the refrigerated section like hot dogs, but there was also this fresh style sausage by JOBURG without nitrates and so flavorful.

There was a product from Australia that one the new product award, Mountain Bread, it is like a very thin wrap, i was not so interested, but they gave me sample pack to take home and now that my kids have finished the whole package in two days and I see the versatility from wraps, to pizzas, to chips and on and on I am won over.

FYI - There were a few new Sriracha's at kosherfest and I was talking to one company about trying to bring in a few sauces with a hechsher so keep yours eyes open at the stores and ask your local kosher markets, if they don't know there is demand they won't carry it.

I love the Lee Kum Kee sauces too, but I do sometime have trouble finding a product I like a second time. The Mushroom Soy is the best. And I was told that they are a very large company and they buy other small companies, so some of the factories can produce kosher and we get some of these great OU products and some don't. If you can't find their hoisin, which is preferred, there is one in the kosher markets, but I do find it too sweet or I have used a SoyVay blend of hoisin with success.

Vegan Fluffy Buttercream Frosting

I make my icing vegan because I keep kosher and like to keep it parve for after eating meat, and it is similar to this recipe, but I find a dash of salt really makes it.
