I think Mcdonalds, KIFC, BFC they oven fries the potatoes. That is why they are crispy than ours and not oily at all. What do you think?

Hi Sunshine,

How are you ? I am gathering knowledge becoz you are best for french fry, cakes, etc etc. I realized that you have much knowledge in cooking than us. Honestly. I wonder if you have done research in cooking. I learnt a lot from yours that I had never thought of. AND it is interesting to read the discussions on cooking. My cake is not burning now. In addition, my french fry never crispy ,so I thought to get some advice from chowhound...

Thanks. I think, the 2nd one is right for me to cut into small pieces.1st one is kind of troublrsome. But, how about if I half boil the chicken pieces first? Will not it work? I dont have thermometer. What it is called? Kitchen thermometer or ?

Why did my fried chicken burn?

Dear chow friend,

Same problem happens to me. I fry the chicken pieces in a Kadai on the Stove. Use lot of vegetable oil. (I dont have a deep or electric pressure fryer.) I fry in small batches. 2/3 pieces at a time in medium heat. But every time the chicken remains raw or uncooked inside
while the outside looks done, I mean the coating gets golden color. If I fry it longer time or give high heat the coating get dark browned or burned but still the inside remains raw or uncooked. That is soo heart breaking!! Sometimes, I also could see the pink color near the bones too. (I fry chicken with bones). So, I wonder if I would half boil the chicken pieces first then marinade them and then fry them. Or, if I would fry it 2 times: First time fry in low heat so that the chicken get well cooked and then use coating and deep fry them in high heat. ( french fry potatoes are made using this method). In that case, there would not any chance that remain the chicken raw or uncooked inside also we can get crunchy outside. How is this idea? Would appreciate your any opinion on this matter. Me & My family like chicken fry very much and I am determined to make restaurant quality fried chicken.

One Question: Is small size pressure fryer available? only for family use? If available, how many chicken pieces I can fry at a time?

Could not understand the : 1 cup half-and-half
1. In a medium bowl, sift together the cornstarch, cocoa powder, and salt. Whisk in about 2 tablespoons of the half-and-half until it is a smooth paste. Whisk in the remaining half-and-half; set aside.

Thanks .One thing : Should I use both Coca Powder also Chocolate ? Here I always saw Sweet Chocolate bars. Dont know if I can get the unsweetened Chocolate. What is non-alkalized cocoa powder ? Can you advise me some Medium quality Coca powder name?

I always make pudding with egg and milk & Sugar. It is very testy too. But now I think too much egg yolk is not good for heart. So, I wonder if I can discard the egg yolk and can make pudding with milk and eggwhite and that would be delicious too.

So, dear friends I wish if you can help me with this recipe also tips for variations and Yummyly decoration of the pudding.

I just want PUDDING

I always make Milk+ Egg + Sugar pudding in my Pressure Cooker. Never used Oven. Actually I can not cook in oven. Though my Pudding always turns tasty and good. Still I am looking for some new Pudding Recipes. One thing : when I make Pudding in home I generally caramel the sugar or brown the sugar following:

At First I heat the mould . Then put sugar in the mold or box. Low the heat . When the sugar start melting I spread the liquid all over the mould or box by moving it. The sugar turns brown. Then I let it Cool & Sticks. After that I pour the milk +egg+sugar mixture on the browned sugar . Close the box tight and steam it in Pressure cooker. Now I wonder should I add water when brown or caramel the sugar?

Velveting Chicken Marinade

Dear Mudaba,

thanks for your useful recipe . But you did not mention how I will use the marinade ; how I will velvet the chicken with the marinade ? Appreciate if you describe the whole process details , step by step. Should I boil in water or fry in oil for the velveting ? Also need to know if the marinade is for small pieces or medium pieces or whole chicken . And marinade time? Is the marinade recipes is for stir fry with chicken and prawn?

Dear Sunshine,

Can I do Grill and Bar B Q both in it ? If the temparature is not same also Gril is quick than bar b q (as Chemicalkinetics told Bar B Q needs 4-12 hours and low heat) ; so I am thinking how I can do Grill and Bar B Q with the same Model !

There is a Trade fair here , in our city . I got one 'TEFAL' Bar B Q Grill : Model : BG-21, watt : 2200W . How is it ? Can I Grill and BarB Q all Vegetables , Fish and Meat here ? Still I have not bought it .

Fish Salad easy & delicious

Dear friends ,

My friend reduced eating meats and inclined to Fish and vegetables. I need some easy, delicious & low carb Fish Salad recipes. I am looking for Fish salads with greens and Veggies. Or only Fish salad; both are fine. No Prawn or Crab. My friend is on diet. Steamed Fish and vegetables are easier. Grilled is also ok.
