Since they are separate chips, would the botel (1/60) rule still apply? That is, maybe in the whole bag, there are 240 chips (wild guess) with less than 4 that are dairy, but if you grab 20 for a recipe, and 2 of them are dairy, then that's more than 1/60.

I am fairly sure that OK has a DE designation and has chosen not to use it. IMO, that means there's reason to believe there is dairy in the bag.

What's interesting is that there are two websites. One from what I gather is the original place and one from what appears to be the current one. The original one is plastered with the word, "organic" but doesn't have the word, "kosher" anywhere. And vice versa on the current one.

There is mock shrimp and lobster with heckschers, iirc. Ham flavor can be replaced by thyme (really) in recipes where you're just going for that mild smokiness. There are vegan ham steaks and pork chops available, but they don't have a heckscher.
Very little of this appeals to me, frankly, beyond a gimmicky usage.

Lox is darker and saltier, while nova is lighter and mellower. This has to do with the pungency of the brine used. Plus, nova is usually cold smoked.
