Mainland Inn Closed "For Improvements"

The dip they served at the bar downstairs (and the brand of chips!), their amazing corn chowder, the sourdough rolls, the perfect salad dressing, the sweet and mouth-smacking red wine reduction for the steak, the EPIC house potatoes... I can't live without these things.

How can I get my hands on the recipes? Anyone have an "in"?

Mainland Inn Closed - Recipes?

Oh, I have a menu. But that's not helpful. :(

Mainland Inn Closed - Recipes?

I've been going to the Mainland Inn since I was a kid. Even now it inspires me in my cooking. Does anyone know what happens to a restaurant's RECIPES when it closes?

I am an accomplished home cook and am undaunted by things like veal stock.

Confit (NOT Duck)

So then, why is duck confit such a be-all, end-all?

Confit (NOT Duck)

Duck confit. Duck confit. Duck confit.

Why is it always duck?

Using similar techniques, could you confit chicken? Beef? Pork?

Why would (or wouldn't) you want to?
