I have now cooked and eaten Thomas Keller's Confit Byaldi twice. I love it. I can't get enough of it. It never looks as pretty as the one in the picture, but I love the flavor. I know I will eat it again and again. Thanks you so much for the link to the recipe.

eggplant recipes that don't involve tomatoes

Hi Phoenika,

I forgot two veggie, because my daughter won't eat them. Onions and green chilis are also used in the eggplant recipe I gave you. I use them when I cook it for myself. I just haven't made it for myself in awhile so, I forgot about them. I add the Onions and green chilis before the Eggplant and Potatoes.:)

The Basics: How to Make Basic Steak

Hi Kysersosai,

If it is cold after resting 10 minutes,the steak wasn't let to come to room temperature before cooking the steak. Never cook a steak that is cold.

The steak will continue to cook after you put it on the plate to rest for 10 minutes. That is why it is left to rest, so it can finish cooking and not ruin the steak by over cooking it. There is nothing worse than burned steak.

If you can get your hands on a walnut press that is for oil you could make walnut oil. It is great for cooking and adds a nice flavor to many dishes. I have never done this but I thought you might be able to do it with the walnuts you have if you can get the press.

eggplant recipes that don't involve tomatoes

Hi Phoenikia,

I don't know what my recipe is called but it is from a friend from India. The only ingredients are Eggplant, potatoes, tumeric, salt, pepper, and oil. I use oilve oil but if you like blander oil use cannola or some other low flavor oil. All the veggies are cubed the same size and sauted in the oil. I usually cook the potatoes in boiling water until they are just starting to soften. Then I cube them.

After you saute about a minute add the spices and cook until the veggies are soft but not too mushy. You are done.

Hi Cherylptw,

I Made cheesy cauliflower Tonight. I had a head of fresh cauliflower in the fridge I needed to use. I don't eat that much so that was it. But it was tasty. I added some Mrs Dash Fiesta Lime Spice blend. It really added some nice flavors to the dish.

I believe you are right about the safety of a rice cooker. Vestavenus couldn't go wrong with that. Just depends on what is to be cooked but rice cookers can make a lot of things.

Hi iheartcooking,

I have some jalapenos, artichoke, onion, jack cheese,,cauliflower,hotdogs carrots,hummus, hot dog buns, noodles(japanese style and chinese style). I know some weird stuff but that is the kind of left overs I end up with.:) I have many spices a lot of indian spices and typical spices you can buy in the regular store. If you can think of it I probably have it or can make it from the spices I have. We have lots of spaghetti, macaroni,rice,amaranth,quinoa,dry beans various types white,red and black beans,rice stick noodles, tomato paste, mandarin oranges in the can,sugar, flour,cocoa,bakers chocolate. if I don't have something I can buy it if it will help me get rid of what I already have.

I doubt if this is everything but it is most of what I have now. Got any ideas?

We eat vegetables and grains most of the time but on occasion I buy some meat and fish.

No I actually haven't heard of Bubble and Squeak but I looked it up and it looks good for a lot of the left overs I usually have. Thank you also for the link I can use all the help I can get with the left over mountain I usually have in my fridge. :)
