I think pupusas has tortas and also Ricardo's stand at the gas station just east of 47th on the
diagonal. His tacos are my favorite.
Live Fire Cooking in Denver/Boulder
Tony Laudisio has several mobil wood fired pizza ovens which are in regular use as well as the one
in the restaurant. I built a copy of them which works very well. You can see it here

salamander to finish Mexican plates.

three blocks south on right side just before Garden of the Gods light. Get back on 25 via

Ham cooking time at 250 F
I agree with 4 hours. and 145 internal temp. I set up my smoker, a Meco, for a temp of 190
and it takes me about 5.5 hours. I have lived to 70 so far and not killed my self yet.
I use a small stick in thermometer to check.Good Luck.
Pizza Oven
Here are some pictures of my oven if you are interested. I love it so much, we make tons of pizza
bread, meat and rolls in it. It was easy to build and works great. We cover it with a sheet of plastic
in the rainy season so it does not soak up moisture. Good luck with yours

I have been buying from these folks for years with good luck. Their site sucks so I order over
the phone on the customer service line and then you are talking to a lady who knows what is going
on. Just made a kilo of longaniso from a receipt I got down in Mexico, oui la la. Good luck

My fondest memories of the book are the illustrations concerning the tiny ancient tofu shops
drawn by Ms. Aoyagi. I wonder what she is up to now days. If any one knows please enlighten
us.

You are perfectly correct. Thanx for correcting my mistake, I did mean the liquid. At
the time I was living in a little cabin which did not have a water system so I had to
haul the water and so I was frugal to a fault.

After many different experiments with tofu I found that I preferred a tofu which was coagulated with
an acid instead of a base. I loved tofu made with Mexican limes. I used to use the okara for dish
washing. As I remember Mr. Shirtliff suggested several uses. I do hope that you will let us join you
in your journey and let us know how it goes. I was fortunate in finding ma po tofu on the menu in
a restaurant in Leadville co. of all places yesterday, I thought of this post as I enjoyed my meal.
