Where to buy espresso maching descaling solution in DC (NOVA) OFFICE NEEDS HELP

I work in Rosslyn for a clean tech startup, and we aren't able to work because our automatic espresso machine is unable to brew our delicious stumptown espresso for us and we're forced to go to starbucks because it needs to be descaled.

Does anyone know where to buy descaling solution in DC or NOVA? We can't wait another day for online shipping.

Wine Dessert Question!

I heard of someone making a dessert by pouring about half a cup of red wine over lime sorbet. I'd imagine it'd be good with a sweet fruity red, but I completely lack the wine vocabulary to know what kind of wine to look for. Does anyone have any suggestions of what they think would be good with this?

I'm going to visit a friend in Berkeley in a few weeks and I want to find a beer bar where I can sample a lot of the great California beers that I can't get back east (D.C.). Also if anyone has any recommendations for a very well stocked beer store with a lot of interesting regional micros I'll be looking for that too. Does anyone have any recommendations for where to find either of those things in the Bay Area?

Delicious alternative to syrup on pancakes.

Hello Everyone. The farmer's market in DC this morning had some black trumpet mushrooms on special that I bought without knowing anything about the flavor of black trumpets compared to other mushrooms or what to do with them. Does anyone have any suggestions for things to make with them?

you're from further out than where my buddy is from.

in kansas they use to have big "Fries" they'd call them where you'd pay 5$ and have all the fried testes you could eat. it was pretty trashy.

not too expensive means under 25ish a person. we're up on 126th st right by the express train so while we prefer midtown we can get virtually anywhere pretty quickly.

bloody mary gin vs. vodka

Now I know traditionally a Bloody Mary comes with Vodka but I feel like that leaves the drink watered down in flavor and lacking something. I've been recently taking all of my bloody mary's with gin and have been very happy with the results. It adds a tasty botanical kick that really accentuates the tomatoes and spices very well. Is there anyone else out there that does this? Anyone else that replaces vodka in the vast majority of their drinks with gin?

I'm originally from charlotte but haven't been back for 5 years. I'm amazed at how much it has changed.

I know a lot of the great old charlotte restaurants that I used to go to when I lived here:
Price's, Showmars, Liberty East.

how far in advance can one peel chestnuts?

I got some fresh chestnuts for some of my dishes next sat and when I tested them tonight the chestnuts were just such a pain to peel.

How long after I roast and peel them can I keep them until they go bad?

pork tenderloin questions

For Thanksgiving, my family goes and rents cabins in a national park, far away from any decent butchers.

My night to cook dinner is Saturday and I'm leaving Washington DC on early Thursday morning which means I'll have to pick up my meat on Wednesday.

Here are my questions.

1. Is it safe to buy pork tenderloins on Wednesday and cook them Saturday? They will be refrigerated.

2. I need to flay and brine them. Should I go ahead and do that before I go or can they be over-brined?

I plan on stuffing, rolling, and roasting the pork in an oven. Any advice at all on this would be greatly appreciated. Thanks so much.

Also if anyone has any ideas on what to serve as side dishes I'd love to hear those too. The tenderloins will be flayed and stuffed with sundried tomatoes, roasted garlic, pancetta, and shallots, then rolled and wrapped with proscuitto then roasted.

Has anyone seen gelatin sheets anywhere in DC?

heirloom tomatos, serrano peppers

any ideas? I have wayy too many. Roommate went crazy at farmer's market. He thought he was just getting enough for a strata, but now we have about half a pound of serranos and 3 lbs of tomatos (mostly green zebra).

Do I need to season an aluminum stockpot?

Do I need to season an aluminum stockpot? I got one at the sysco supply store and my roommate threw away the instructions that came with it. I thought I saw something about seasoning in it, but I don't know for sure. If anyone knows and could tell me how to season it I'd appreciate it. I need to get started on my espagnole!

mustard greens, salt pork, fingerling potatoes

I ended up cooking porcini mushrooms with them.

they were dried, so after the potatos sauteed for a bit with the onions and garlic in the pork fat I added hte mushroomliqoud and let the potatos cook in that. After the potatos were done I added the mushrooms themselves fresh thyme, rosemary, chervil, and parsley and the greens. I dumped a little parm and some lemon juice in at the very end.

it was quite delicious
