Is it safe to heat plates in the microwave?

Could there be lead in the glaze or ceramic and that's what's heating up the plate?

LeCreuset Prices set to go up Feb 1st

LeCreuset have gone up constantly since 1975-no surprise here. Does the word "overpriced" come to mind? Especially since Target, Walmart, TJMaxx, etc all offer similar stuff for $35-$50.
Good luck to them for shooting themselves in the foot. Hideously overpriced!!!!

Copper Core or copper band?

Hmmm. 1mm ain't much. The lightest Mauviel uses 1.5mm and the big boys (Falk, Bourgeat) use 2.5mm.

Well, how's this? "Does the copper in the All-Clad stainless steel Copper Core pan encompass the whole outside of the vessel? Is it 1.5mm, 2.0mm, or 2.5mm thick?"

Copper Core or copper band?

Does anyone really know how much copper is a Copper Core pan? The copper band around the bottom looks nice and all that but does it really go all the way up the side and across the bottom? And how thick is it? Does it perform like a real copper pan or is it a marketing ploy to jack the price up?

Pizza stone or cast iron pizza pan

I'm not sure how you make a pizza in a cast-iron pizza pan. Do you prepare the whole pizza and slide it onto the pizza pan then put the whole thing into a preheated oven? Or do you do it on a stovetop totally, starting from room temperature? Or cook partly on a stovetop then finish it in the oven? It would seem you're asking for a disaster by trying to slide a prepared cold pizza onto a hot cast iron pan, knowing the proclivity for this to stick and thus spew the contents all over the oven or stove. Any clues? Especially for the Mario Batali 14" one where he says they prepare them totally stovetop in his restaurant.

Doesn't aluminum erode your brain and cause Alzheimer's? Isn't that why people no longer cook in raw aluminum pans?

We just got a countertop convection oven, can we get rid of the microwave?

Microwaves are best for reheating leftovers to "as cooked" condition. They aren't so good for reheating pizza (soggy), waffles (make them spongy) or other items you'd like to be crispy.
But they are good for cooking raw veggies in lightening speed and for popcorn. And I'm just guessing here, but it would seem they use a lot less electricity because the cooking/reheating time is so short, whereas a toaster/convection oven has to grind away for 10-15 minutes with their heating elements blazing.

your most disappointing kitchen-related purchase of 2010

The red Kuhn Rikon Easy-Squeeze Garlic Press . Very little of the garlic comes through the holes an the hopper gets totally crudded up requiring constant cleaning or else it won't work on the second clove of garlic. The red color looks nice but otherwise it is useless; surprising because I bought it because it was the top-rated over there at Cooksillustrated.com.

Kind of hard to figure out what's 20% off. The prices are all over the place. The Mauviels have hundreds of dollars in differences on every saute pan and it isn't clear what the 20% is. I'm still unimpressed. Smoke and mirrors.

Is Le Creuet worth the price?

I assume you mean Le Creuset? It is probably not worth the price. Get a Tramontina, it's also cast iron covered in colored enamel. Probably cost you $65 for a 6-8 qt whereas Le Creuset would set you back hundreds. I don't think the extra cost translates into performance or even looks.

Need new fridge -- get bottom freezer?

It doesn't matter that cold air flows down. Most all air-movement in modern refrigerators is propelled by fans. My only regret in my cooking life is that I never got a bottom freezer when I had the chance. How stupid is it that for the stuff you use 90% of the time you have to bend down to see and handle. Wouldn't it be better at eye-level? Case closed.

I saw a Baumalu this week at TJMAXX and the label said (shudder) "Made in China". What does that mean? Does Baumalu no longer make their own copper pans?

Copper cookware - Falk vs. Bourgeat

I have owned and used the Falk 4 L chef's pan or saucier for about 10 years. It's remarkable, durable, and has all the attributes mentioned by others here. The satin finish doesn't need much attention. If you do clean it I found out that our dear old Barkeeper's Friend does a super job. It really performs outstandingly while making risotto.

Absolutely the best. I can recommend them without reservation. I picked up a massive old hotel-sized copper saute pan (14-16") at a tag sale and they brought it back to life beautifully. The tin was smooth and clean and the copper was sparkling. Their turnaround time was under two weeks (once they got it) and their prices are reasonable. You must prepay. They are totally reliable, experienced, and trustworthy.

Anyone ever see or use this Italian-made pasta pot?

Whilst searching around for a good Italian-made pasta pot and strainer, I came across this one from Bridge Kitchenware, a very repected cookware seller .

All I could find out from them was they stopped importing them around 2003 and they were made by an Italian company called Visconte (no, not the film director). They were also called VIS (maybe short for Visconte?). Googling it turns up nothing. Has anyone ever owned, used, or seen this one?
