Quick and easy meals for 1.

I work from home and have a terrible time feeding myself a decent lunch. PBJ gets old after a while but I really don't have the energy to cook an actual meal plus the dish washing.

What do you eat for meals and snacks when you aren't up for doing a whole lot prep or cooking?

Bonus points if its something geared for just one person to eat.

The Challenge of Going Vegan

I'm a vegetarian but closer to vegan than omnivore. I rarely consumer eggs and dairy, no gelatin, but I do use honey pretty often.

For me, the challenge is more about out of sight, out of mind sort of thing. I could shop for a total vegan diet and stick to it. That's easy. What's not easy is that my DH is a diehard omni. He drinks 2 gallons of milk a week and loves eggs. Sometimes I find myself hungry, not wanting to cook or eat an over processed snack, and the cheese he insisted I buy just screams "protein!" Or cracking open an egg is easier than making up a flax egg.

We've come to the agreement that meat won't be kept in the house. It's taken us 6 months to get to that point. I'm hoping to eliminate eggs next. If I take things slowly, he's less likely to fight back. By fight back, I mean feeding our lacto-intolerant 2 year old grilled cheese and giving him a cow's milk yogurt-eeeeeeeeek!

Omnivore Interested In Vegetarian Foods

A huge portion of my family's protein comes from rice and beans. Together they make a "complete protein" in terms of amino acids. Quinoa is also a pretty solid mainstay.

I've found that you can substitute chickpeas for just about any chicken dish! We love chickpea tacos, teriyaki, curries, you name it. I'd totally suggest exchanging some chickpeas for chicken the next time you want some non-meat variety in your dinner.

Have you ever played a food trick on someone?

I haven't but I do have a fun trick story that was played between two family members.

My aunts (really family friends) met while in college. They are now SILs but that's another story. Aunt A and B decided that they would not yuck each others yums while living together and would eat what each other liked. Aunt B's little sister found out they both hate sauerkraut so she secretly told both that kraut was the others favorite food. For months they chocked down jars of kraut until finally Aunt A spoke up and said she could take it anymore. She hated kraut and wouldn't eat anymore of it. Aunt B confessed, too.

Aunt C (little sister) still laughs hysterically when the story is told.

I'm itching for a new piece of CI for my collection and it looks like it might be fun for cookies. I mostly use stoneware for baking so CI seems like it might be comparable since they both take a bit longer to heat.

How do you like your coffee?

I drink mine with a tbsp or two of honey and a fair amount of So Delicious coconut creamer in French vanilla. Not quite was someone would call light/sweet.

I prefer the darker roasted beans.

How do you feel about people eating food in the supermarket before they pay for it?

I have done this many times. I think the employees would rather see a kid with an open box of granola bars (which the parent is paying for) than having one scream their way up and down the isles.

In high school, my friends and I went to the grocery store and watched a kid (probably7-8 years old) take a bite out of each flavor of bagel from the bins and put them back. It took me many years before I could bring myself to shop the bulk bins again!

You totally reminded me of the time my husband suggested we become veggies. I worked hard for two weeks to make meals that would make him not miss meat even though we were both craving it.

We both threw in the towel after I drove his car and found various fast food hamburger wrappers hiding under his seat! What a cheater?!

What made you choose your diet?

Tell me about your journey to being meatless.

I think my body and mind are pushing me to give up meat. Just woke up one morning and the thought of eating another animal squicked me out. A few days later I tried to force myself to eat some and ended up sick all night. Still not sure if it's permentant or a phase. Only time will tell but it was been 2ish weeks!

What have you canned this season?

I don't have my own garden but I'm addicted to canning so I buy locally grown.

Right now Im drying the last few pounds of tomatoes. When it's all said and done, I'll have turned 180 lbs into 30'pints of crushed, 20 pints of pasta sauce, 20 pints of salsa and a few freezer bags of dried.

I also have done 15 pints of peaches. I can't remember the numbers of jam but we did a few batches of plain strawberry and a few of strawberry balsamic. The latter has been a huge hit.

Not exActly seasonal but I can dried beans so I have them ready for stews, soups, chili and such. Mostly black beans and garbanzos.

Tipping before or after added tax?

This is exactly what I do. Well, used to do. Now that I have a toddler who is a messy eater, I double the tax then add $5. We try to clean up as best as possible before we leave, but it's no where near perfect so I hope the extra $5 makes our server feel compensated for the mess.
