I found some at www.gourmetfoodstore.com kind of pricey $15.50 per pound.
We make our own now for the restaurant, my former boss who lived and worked in France said it was pretty close to what he ate in France.

Traveling to Montreal with a Fine Dinning Chef

I'm also a Chef and I really enjoyed Joe Beef . I've heard good things about Brassiere T.
Garde manager looks good also. i might be planning a trip to Montreal myself soon, and those three are on my list plus Le Bremner, Chuck Hughes new restaurant.

Deli recommendations?

Cross roads deli in minnetonka is good, great corned beef and pastrami, matso ball soup is the best. Daily lunch special of beef on weck is outstanding.

Locally made American cheese

I use only Wisconsins Carr Valley on my cheese board at Tria, Kowalskis carryies a nice assortment.

Travail in Robbinsdale

Tried it last night for the first but not the last time.
Fantastic. we shared the beef tartre, tuna belly and the pressed pastrami sandwich. all were outstanding. Inexpensive, well prepared and well presented. It's great to have such a great restaurant so close to home. I can't wait to go back and try a foie gras dish that they are going to put on the menu. keep up the good work guys, everybody else try it and tell you friends about it.
Lets keep them in business. Great bunch of guys and great food.
