You've worked in a "few" restaurants so you make a general assumption that nowhere in the world, in any kitchen, on any line, cooks/chefs aren't using high end knives?? very presumptuous of you..

Searing - clear up my confusion

"Is the higher heat better for some preparation techniques or types of protein?"

I save the high heat searing for meat(steaks, pork loins, lamb, chicken breasts etc) when I want a nice crust. I don't worry about fond because I don't deglaze my pan that often.(I'm not a saucy kind of guy)
Fish I always lower the heat a bit because I'm mostly just looking for nice "color" and I sometimes use non stick depending how delicate the fish is..

Searing - clear up my confusion

For high heat searing, cast iron or carbon steel pans(deBuyer)work best for me.Both of these can go from stove top to oven with no problems at all..

Best way to clean your knives

"First and foremost bleach is really only an effective sanitize in hot water. That bucket cools down in 20 minutes, and if its bleach its ability to sanitize is seriously reduced."

Funny, I was taught the exact opposite in my food handlers course. We were told that bleach was "killed" in water that is too hot..

It's called a "granton edge" some say good(no food sticking) some say bad(after a while of sharpening you get close to the dimples) I say not really necessary9but that's just my opinion).
If you go up in price by $15-$20, Mac has a nice 8" chef knife on EBay. I still like the Tojiro the best..

Of the 4 you've listed, my choice would be the Tojiro.
Mac makes an excellent knife but an 8-10" chef knife comes in around $120.00+.(GH1618 is correct)
I've handled a Ken Onion knife before and I wasn't impressed at all.
I highly doubt you'd be able to "handle" all of these knives at a retail store, buying before handling is not the worse thing you could do...

Informal/Daily Barcelona Recommendations

I had a great pizza at Buon Appetito Pizza in the Born District, a nice mix of locals and a smattering of tourists.
Café Petite Pot(Plaza Urquinadina) was my local go to coffee shop/breakfast joint, very friendly staff, nice pastries, coffee and a good burger.

Chok for great donuts and chocolate, just off Las Ramblas.

If you make it down to the beach, which you really should, la guingueta is right on the beach, a little pricy, not the best service but the perfect place to cool off with a drink, grab a bite and people watch.

Looking for Authentic Experiences in Barcelona

Boqueria is a great market as long as you get there early(before 10-11am). Have breakfast(el Quim or Pinotxo bar) or an early lunch, before the teaming, unwashed masses swarm the place..
Not traditional in the least, Chok makes some mighty fine donuts and chocolates very close to the market down a small side street.

Though it might be too late to book, Aborigens food tour was a great way to see some local eateries, places that I would never found on my own. Just remember that August is holiday time for most restaurants in Spain.

The prices were the same at Scarborough Rib Fest and there was a $2 "donation" to get in. The sides were just filler and not worth it in my opinion(even though it was just $3). Small line ups at 5pm Friday night.

Rib Fest 2015

So my BIL and I decided on "Texas Rangers BBQ" as our ribber du jour. I was impressed, nice smoke, tender but with a bit of "snap" a bit fatty, meaty and the sauce wasn't too sweet(nice vinegar and pepper flavor) $26.00 for a full rack w/ two sides(beans and slaw, meh). I got a chicken and rib combo to go for my old man, $15.00, good value 1/4 chicken and 1/4 rack o' ribs.
A good feast was had by all... Glad I went.
