Advice on knife sharpening

I hear ya.
I'm lucky that I have a couple of great purveyors that offer knife sharpening in my neck of the woods as well, although I haven't taken advantage of their service yet.
I think a spring tune up/spa day for the girls is in order.. :)

I have seen and used the Ken Onion knives, didn't care for them at all.
Seems to me that you've already made up your mind about which knife to purchase.. go for it.

Well, first of all unless you have a gift card from WS, I'd stop looking there.
Chef Knives To Go has a great selection of knives in that price range.
What do you prefer, Stainless steel, carbon steel, profile, wa or yo handle?

a)for $200 you can get a better knife
b)yes if you're not happy with your current set up or just want to "upgrade"
c)sounds like you have some good knives, but that doesn't mean you can't get more/better... :)

Montreal Advice - 5 Days

You've got a great list there, all top notch eating establishments. I doubt you'll be disappointed with any of your choices.
I've been to both CCeP and Le Filet and found them to be quite different and enjoyable but I understand what you're saying.
And I get what you're saying about Joe Beef and APDC, can't miss when you're in Montreal.
You're gonna have a great trip in a great city with fantastic food and I'm totally jealous! :)

magnetic knife holder. Yay or Nay?

Yay for a magnetic rack, nay for putting it above the stove.
I've had mine for a couple years now and have never had a problem with slipping or nicking the wall. It's a generic strip purchased from a local kitchen supply purveyor.

Montreal Advice - 5 Days

I hope you don't mind a non "Montreal hound" chiming in.
I ate at 400 Coups about a week after the exodus(Sept 2013?) and had a fantastic meal. I sat at the bar and had the 5 course tasting meal, absolutely flawless.Maybe things have changed?
Le filet was great as well as was brunch at Lawrence(the wait wasn't so bad at 10am)
My meal at Joe beef wasn't so memorable, too much food, hard to read menu, and if you're going to APdeC I'd skip it.

Bleach usage in the kitchen

Diluted bleach is fine and recommended to clean areas that had raw proteins on them. I've been using "Lysol power and free multi-purpose cleaner with hydrogen peroxide" lately.
