Orange Marmalade Truffles

We use Silk Creamer by White Wave as a dairy free alternative and it works perfect for truffles and ganache, substituted 1:1 for heavy cream, 1/2 and 1/2 etc. It's nondairy, lower fat. The only negative is it is a sweeter option than dairy, so try it out!

Does this seem like a reliable/safe recipe for home canning?

It looks like it will be on the high acid side, meaning good for water bath canning. You can contact them or ask a local extnesion office for their opinion. You can send the recipe tot he AZ extension at www.extension.org/ask. They get back within the day with excellent advice. Also, check out Lisa Rayner's new book on safe canning, called The Natural Canning Resource Book (http://lisarayner.com/).

Home Canning- Recipes Necessary?

Check out Lisa Rayner's thorough book on safe canning (It's called The Natural Canning Resource Book and can be purchased through her website: http://lisarayner.com/). MikeG made some excellent comments about proper food preservation and acidity. Botulism poisoning can be deadly and is not worth the risk of unsafe homemade recipes.
