Hot Trend: Inventive Mole

my understanding is that mole means sauce as TG says. like gravy is sauce (ask your italian, haitian, and southern friends what gravy is and you will get very different answers). I am curious about what thread she maintains throughout her moles that she feels make them "moles" rather than just calling them reductions or whatever?

someone more familiar with these flavors may want to embark on such a journey. for those of us who are much less familiar, I think it would be helpful to give us some kind of a clue as to what components of the dish or dish on the whole tastes like. it is very difficult to imagine as written and I don't think people would put the time and dough into it completely blind.

Milk: Got Enraged Consumer Base?

milk also supposedly increases serotonin levels, which are some of our brains chemicals that regulate mood, sleep, appetite, etc. (think about the glass of warm milk to help you sleep). this may be why it is said to alleviate PMS. should also be good for whiny husbands and boyfriends:).

I have a pork chop aversion because it is hard for them not to turn out like hockey pucks without undercooking them. how does the texture turn out in this recipe? does one need the special heritage pork that doesn't have all of the fat bred out of it?

how do I tweak this then? less voddy? I was going to use canned/jar clams (I know but I didn't want to fuss with the real thing until I knew it would work. maybe forego the clams and just use the chorizo? btw, Tito's handmade vodka is super smooth with a great vodka flavor.

Spiced Honey Cake with Caramelized Figs

mine came out super dry and I took it out at an hour 10 min. not sure what happened there. it also didn't seem sweet enough, lacking in flavor. could have been because it was soooo dry.

Where Are the Healthy Drive-Thrus?

I agree with mynah. lack of meat doesn't = healthy. it seems there can be fast food with better quality ingredients and I believe the food truck boom is part of that movement (see Only Burger in Durham, NC- local, fresh and seasonal ingredients = "greener" and yummy). no one even mentioned the expense. chipotle is expensive, particularly for a lot of the people who buy fast food regularly (and quite frankly, if I am paying 10 bucks, I want something better than a bean burrito loaded with rice as filler).

what if you can't get hungarian paprika paste? I've never seen that. I know it is inauthentic, but I have added morcilla to goulash before for the richness you might get from liver. it was yum.

While not in Raleigh, Acme in Carrboro has all entrees for $12.95 on tues. Sometimes I am blown away by them. sometimes I think, hmmm...didn't knock my socks off, but it was okay. for $12.95, feel free to experiment!
