i guess i posted in the wrong frame to reply - my apologies - I was speaking of China Islan of Bloor and I do know that 668 is a vegetarian retaurant since I have eaten there a few times.

I would recommend China Island Restaurant. They are located at 1572 Bloor Street just west of Dundas West TTC Station. The food is always fresh and I would recommend calling ahead of time although they are pretty quick with service and the food is always fresh and you can watch the food being prepared. I am a chef and like to frequent the hidden gems in Toronto. This is definitely one of them. If hip is what you are looking for (not sure how hip you want the place to be if there will be a four year hold in the group). If you want substance and not the WOW factor this is the place to eat. If you like WonTon Soup it does not get any better than the one served here.

Cilantro Lime Vinaigrette?

I personally would not put all of the ingredients in a blender and then thrash away. I would combine in a bowl and whisk together all of the ingredients including the mustard (emulsifier) and vinegar(acid) seasonings etc, then from a decent height and while whisking slowly drizzle in the oil . This would help acheive the creaminess you are looking for and by whisking the flavours would be subtle and layered ,and you would have the chunkiness (texture) of the ingredients you bite into the greens.

I purchased the ingredients and tools in the kits for less than the prices being offered - for SUBSTANTIALLY less - I saved approximately 68% off retail. The chemical components were pharmacy/food grade and the tools were surgical grade so am I paying for the name? The packaging? The marketing? This fancy packaging is not what you see in production restaurants so enlighten me? The recipes and methods are available online so where is the mark-up originating?

I am sorry to have joined this discussion so late so I will just say that if you can access the following book - Gisslen - Professional Cooking [textbook, college edition] (Wiley, 2007)
Chapters 29-34 will provide some essential basics - I hope this helps and you can get the text book
