Blis Fish Sauce ? Anyone tried it, or have any opinions on it ?

Blis fish sauce is red boat sauce (40) but aged an additional 7 months, anyone tried this ? How does it compare to traditional red boat or any other "premium" fish sauce ?

To be honest, I don't even know any other premium fish sauces, but would be interested in what is the best ones out there.

Thanksgiving Dinner catering, need some help.....

Thanks, I'm looking at them, I'm still not sure though how good the food actually comes out though, I've never had a thanksgiving dinner catered, and I don't know how long it would take to warm or prep everything either..........I'm a total novice at this.....

Thanksgiving Dinner catering, need some help.....

I'm doing the Thanksgiving thing this year for the family, and we're trying to figure out what both the best (and most reliable) place to order is.

I'm thinking Citarella, someone else told me to order from Zabar, while I'm also considering Fresh Direct.

I'd be picking everything up on Wednesday, and reheating it on Thanksgiving, but how much time, work and effort is actually involved here ?

Who is the best thanksgiving meal caterers out there in New York ? and how reliable are they ? I don't want to place and order to be picked up, and then show up and its not there (or if I go with fresh direct, worry that the order won't be completed).

How good are holiday thanksgiving caterers and how much work/time goes into reheating everything ?

We're looking at a dinner for somewhere between 6 to 10 people. I really appreciate any feedback or help you kind folks can provide.

Bacon of the month clubs !!!!

The ones I had were from Canada, and were really lean with almost no or very very little fat.

None that I know of, but I have ordered canadian bacon,and the bacon of the month clubs do include it so I don't think its a customs issue.

Bacon of the month clubs !!!!

I like the Jalapeno ones the best, but I have a bias towards anything hot and or spicy, the garlic one is good too, I lean towards the peppered and smoked, the only bacons I wasn't to keen on are the canadian bacons, not a big fan of them, they are a wee bit to lean.

I did love the country swiss bacon that came recently, I thought it was hams because of the shape, but it was dang good bacon.

Bacon of the month clubs !!!!

I'll admit, I'm a bit of a nut, I'm probably the only guy who is in 4 bacon of the month clubs, what I want to know is if there are more out there and also which ones people think are the best.

I'm in the Grateful Palate bacon of the month club (an excellent one, and it seems to be the most popular), along with the "Bacon is meat candy" (aka bacon freak) bacon of the month club, and also both bacon of the month clubs from the "pig next door" (they have 2 of them, one is the traditional and the other is the "heirloom" club).

I've heard Zingermans is good, but its only 6 months, not a full year.

What other bacon of the month clubs are out there and also, from folks who are in these clubs, which ones do they think is the best?

My only gripe is that all the bacon is strictly American (well, they do have canada too), nothing from Italy, Korea, Japan or any of the countries overseas that have bacon.

Cooking with salad dressing?????

We're were thinking of using the bottled stuff and had a few ideas.

One idea was to use creamy style salad dressing as a pasta sauce (but it would be warm).

I was never sure if you could reheat blue cheese or not, this whole topic came up recently with some friends for a few reasons, one being that if you have hot wings, and pour either ranch dressing or blue cheese over the wings, does that mean you can't put them back in the fridge and reheat them later on?

The other reason, would probably make some folks sick, it involved bacon that after being cooked, would have ranch cream poured over it, and then eaten, but obviously the ranch dressing would then turn warm, and then there were questions about putting this back in the fridge again and reheating, etc.

Cooking with salad dressing?????

Question, can you or is it possible to cook with salad dressing?

I know some folks use italian salad dressing as a marinade for steaks and stuff, but I'm wondering if you can also use it for other purposes.

Also if you eat something that has salad dressing on it, and choose to put it in the fridge and reheat it again, is it still safe to eat?

My big question is, can one fry or cook with creamy salad dressings, like ranch dressing or creamy italian dressing?

Can creamy dressings be microwaved or reheated?

I'm really interested in getting as much info as possible regarding using creamy style dressing to fry with, or if they can be microwaved.

I really do appreciate any and all responses.

Breakfast question

When I make scrambled eggs, it takes me about 10 minuits. However, often, I skip breakfast because I got to get to work early, I was thinking of simply taking them out of the fridge, and bringing them to the office and microwave reheating them there.

I don't eat eggs or bacon every day, I do mix it up, but everything is convenience style. I also hate and loathe those bars.

I actually don't like hard boiled eggs. I know its odd, I basically go for scrambled, and once in a blue moon, an omlette, and even then, under extreme circumstances.

Breakfast question

In the morning, my time is really really tight.

I was thinking of simply cooking my meals the night before, and just reheating them in the morning (or taking them out of the fridge, and bringing them to work and reheating them via microwave there).

Question, can scrambled eggs be made the night before, put in the fridge, and reheated via microwave in the morning? and if so, is their a way to prevent them from being rubbery or dry?

I know this is easy to do for bacon, not to hard for sausage, but its the eggs, that I am worried about.

Any ideas or suggestions?

Some feedback on Blair's death line of Hot Sauces.

I'm getting a nice package of a bunch of different Blair's hot sauces.

The ones I am getting are the Original Death sauce, the After Death sauce with Chipotle, Jalapeno Death with Tequila, Sudden Death with Ginsing, Jersey Death, Pure Death Naga (Ghost) Jolokia, Sweet Death and the Mega Death sauce.

I'm not bothering with the reserve stuff. Has anyone tried any of these flavors from Blairs?

I'm also aware it may not be the wisest consumer choice to purchase products that advertise passing away.

Incidentally, I'm also getting a whole line Dave's gourmet sauces (the guy who has the insanity sauces).

Those sauces are the Roasted Pepper & Chipotle Sauce, Roasted Garlic Hot Sauce, Scotch Bonnet Sauce, Insanity Sauce, Cool Cayenne Sauce and Hurtin Jalapeno Sauce along with the Hurting Halabenaro sauce and the Garlic Chilie sauce.

Not planning on really using the insanity or ultimate insanity sauces, but would love to get feedback from folks who have tried these other sauces and see what they thought of the flavor and heat.

I appreciate any comments, feedback and opinions on these sauces.

Use for creamy garlic salad dressing???

Long story short, we got a bottle of creamy garlic salad dressing, I don't eat salad, it was bought by mistake because someone thought it was a pasta sauce.

Can you cook with salad dressing or warm it up or heat it or is there anything that it can be used for besides as a salad dressing?

Brand New Kitchen (all star appliances)

I've got a pretty big budget on this, which is why I am going all out.

That said, we kind of lucked out in that the contractor we are going to use happens to have a second job.........as an inspector, Its safe to say that we are going to be "compliant" (one way or another).

The house is going to be big, and we are planning on a long term stay, so we want to go all out on all top of the line stuff.

The convection toaster oven is just something that seems to fit in, but the meat slicer is something I am big on, I'm kind of like a aficionado on that. I really do get into that stuff.

Brand New Kitchen (all star appliances)

Long story short, I'm going to be renovating the kitchen at a new house I'm moving into this fall.

We've decided to go with the All-Star approach to the kitchen.

Sub-Zero fridge, Viking Oven, Miele dishwasher, and Broan Hood and an advantium (240).

Granite counter top, and a whole lot of cabinets.

Last things to figure out, what kind of convection toaster oven should we get? Deep fat fryer? should it be built in, or stand alone, what's the best ones?

What about warming drawers? good idea or bad?

What else should I add? I'm also going to be adding an outdoor kitchen area later on, for BBQing and stuff, I haven't done the research yet on what the best bbq stuff is, or the best outdoor kitchen set up is. Smoker? etc.

I would really appreciate any feedback and ideas, and am open to any suggestions?

p.s. I'm also thinking of adding a meat slicer, not sure if thats a good idea or not.

Do kitchen appliances really need to match??

I'm actually getting me a new kitchen this fall, and thanks to a nice budget, went with the All-star kitchen set up. Viking,Miele, getting an advantium for the microwave though.

Any recommendations on top of the line toaster/convetion ovens?

Just looking for some info, what websites sell chinese food items, i.e. meats, sausages, etc?

It seems easy finding cold cuts, italian stuff, steaks and so on, but I'm hitting a road block on chinese (and also korean, actually, most oriental) stuff.

Samgyeopsal (aka Korean bacon)

I've tried and tried to find Samgyeopsal or korean bacon as its called, and can not find anyone who sells it.

I'm looking online at different retailers, but no one seems to carry it, I'm wondering if anyone knows a place that ships it (or places in NYC that sell it).

I really want to get my hands on this stuff, but, dang I am having no luck, anyone out there with any ideas or know any places????

Mail order Buffalo/Hot/BBQ Wings?

I've always been a wing nut. I can get some good wings where I live, but only a couple of places, and since my kitchen situation is in a bit of fluz right now, its a pain for me to make them from scratch.

I would like to try it out and see how it goes, it could make for convenience in the future for me.

I could also use it for entertaining purposes down the road. I already mail order a bunch of other foods.

Looking for the best toaster to match

I'm going to be renovating a new place that I am moving into.

I'm going for the all star kitchen, Sub-Zero fridge, Viking oven, Mihle dishwasher, advantium MC, etc.

Whats the best top of the line toaster oven out there? I'm looking to give it some pretty good use (I entertain alot) for bagels, toast, etc.

I'm open to any ideas, It just seems that most toasters conk out, or break down to soon or have other problems, FWIW, I'm not looking for one of those toasters that does pop up, but I am considering the conveyor style ones, or the types that are like mini convection ovens things.

Pork Hocks and Pickled pigs feet

I've always been a huge pork fan, but someone told me to try something different ( I don't know him well, and not to sure if I should listen to him). Its pork hocks, and or pickled pigs feet. I am kind of okay with trying them, but I am not even sure how you eat them. If you buy pickled pigs feet, do you have to fry them and or cook them, or can you eat them straight out of the jar (like pickles). Does the same thing go for Pork Hocks?

Anyone that can give me any information (Keep in mind, I live in NYC, I have no idea how this tastes, or how to even eat it, or what I would do, if I ordered online), I would really appreciate. I do have an interest in trying "pickled pigs feet" and "pork hocks", but I don't know how to order it, and if I do order it, what to do with it, and do I cook it, or just eat it out of the jar? Any answer or help is really appreciated.

Knives, kitchen, steak, Need advice.

I'm choosing between 4 sets of steak knives, W├╝sthof, global and sabatier or Victorinox. I could also just get a whole knife set, what I want to know if anyone out there has any of these brands and how they like them, or which one they thnk is the best one.

I have to admit, I am kind of looking to go the high end route with the knives. I know I shouldn't overspend, but in ths case, I really can't help myself.

Also should I just buy steak knives or get a set instead?

Advantium or not to Advantium?

I'm kind of narrowing down choices on the best microwaves, does anyone out there have or own an over the counter advantium? The model I am looking to get is the SCA2001KSS, but I would like to know what other folks out there think.

Also, if maybe I should spend the extra money, and just get the advantium built in wall oven? Is there that big a differance in the 2?

Need some help buying a microwave oven.

I'm having a kitchen built soon, and have pretty much decided to go with the dream kitchen all star type set up. Viking oven, sub-zero fridge, miele dishwasher, but I can't figure out what the best microwave is out there.<P>

I would really appreciate anyone opinion or ideas about what is the best top of the line microwave oven to get, and what peoples opinions are on what features are the best to have or most useful, most of my friends are telling me to get the GE advantium, I am not sure if its the best choice though.

I'm also using consumer reports and my friends to get feedback, but if anyone has any ideas on the best, just post'em here.
