How do you deal with the compulsive need for everyone to like your food?

At this womens church breakfast you take home your leftovers: I had been taking homemade Sausage Gravy & fresh biscuits(I live 2 doors away so they are hot when I get there). There was very little left over. When I decided to try a quiche that always gets rave reviews at home, I ended up with much to take home. My attitude? All the more for us!! We love it. Not many were familiar with quiche, so I just take the sausage gravy & biscuits, no big deal, enough have loved the quiche that I take no offense.

We did this with church members who had just had babies. We signed up for a certain day and delivered a whole meal @ 5 pm. It was well appreciated by Mom & Dad that they didn't have to cook for a week or 2.

How do you split the bill and tip evenly?

When we dined as a group and it was time to pay, we(usually I, even tho there was a CPA who organized the group) added up from the menu, everyones separate charges, and 20%-ed it. The CPA couldn't add up the tabs without a calculator, LOL. Everyone usually kicked in more than necessary, and our server did well.
This was at a small tavern frequented by many NASCAR drivers, owners & teams. Food is phenomenal. Most others came to 'see'. Super busy and very noisy. We quit going because you couldn't hear much of what was said, and 'seeing' the NASCAR folks, well they are just folks who make their living on a race track.

Palate Memory...

Yes, there are several: rice balls, fried cube steaks & rice with milk gravy, and homemade beef soup with homemade noodles. All reminiscent of my moms cooking, and I still make them all. The last time I did the homemade noodles and had them drying on towels on the table, most of them got eaten by one hungry(ha) greyhound!!

What's for Dinner #358 - The Easter/Passover Edition! [through April 7, 2015]

This Easter is strange for our family. Son is driving up to CT to the submarine base for a week of work, middle daughter is working and her hubby is working on Nantucket, with little time off, youngest daughter and her hubby & 2 sons are in So. Md. racing dirtbikes. And hubby and I are recouperating after getting knee replacements 3 weeks apart, figured we dould gimp it out together!! We are doing fabulously!! Dinner here will be a rib steak on the grill with the fixins. Back to the usual next year I hope with the delicious fruit braised ham and whole family in attendance.

Does anyone else but me prefer, or even insist on, light roast coffee?

When we are staying in the country we always take coffee and grinder. So much better to have fresh ground.

Additional charges that seem unjustified that the establishment might think twice about

I decided not to ever patronize an Italian sub & pizza after they charged $.50 for hot peppers on an Italian sub. That is cheap and ignorant. And it changed hands since then. I told the man I was doing that too and he shrugged his shoulders. Oh Well, it wasn't the best one in town, was convenient then.

Corned beef... oven or stove?

I tried a back to back test of the 2 methods once. I preferred the stovetop method. I felt the oven roast was too salty. just my preference, and Hubby loved the salty oven roast. But they were both delicious, we love corned beef. I'm glad I did the test, now I know the difference, side by side on the plate!!

Maine Lobster or Spiny Lobster?

Oh yes, Maine Lobster WITH all the Tomally(green stuff). It tastes like the essence of lobster flavor. I would never give up, willingly the great claw meat. If you have a little time, you can order a whole New England Lobster Bake. It comes in a big tin can which you add water to and cook on the top of the stove.. It has clams, mussels, new potatoes, sausage, and the specified # of lobsters. Is delivered to your door packed in dry ice. I have NEVER had lobsters that tasted fresher. All in one pack.

Go to the TSA site and send email. I did and got a prompt reply with an affirmative answer regarding a frozen cooked whole pulled pork roast. Didn't want that baby to get confiscated!!, or appropriated for a TSA's dinner!!

Blue crab blues

This sure sounds like it was Asian canned crab meat. Fresh Blue Claw is sweet, and firm and white, and isn't fishy smelling. And it is called blue CLAW crab. The claws are the only blue part. Hence the deception on the label.

Stuffed cabbage question

The one tip my Mother in Love taught me that I haven't see mentioned is to cut off as much of the heavy 'rib' from the cabbage leaves. It makes for much easier rolling.
Someone mentioned honey, just a little, MIL said brown sugar.

Easy things to prep/eat while on crutches

When I had my first Knee replacement I had no problem preparing the food, the problem was getting it from the prep area to the table. This time Mar 9, it won't be a problem....we are retired, and hubby will be there.....as I will when he has his knee replaced the 30th of March. Then we will gimp together and exercise together all summer. Can't wait not to hurt with every step, and he the same!!

We never called it pasta until we moved to Ocean County NJ, and were surrounded, literally, by Sicilians. and I learned great recipes from them. Pasta is ingrained in us now!!!

In 25 years removed from NJ to Delaware, we found the best sweet corn we've ever had. Grew our own tomatoes and the were never as good as Jerseys. Then we started buying seeds from the Jersey tomatoes we used to grow.
Voila!! Delicious tomatoes again. Rutgers, Brandywine, and BeefMaster were the varieties we loved and have again.

I same time and energy by steaming our corn. With one inch of water in bottom of pan, bring to boil, cover pot and time for 4 or 5 min. Corn is so fresh and sweet. Everyone tells us it is some of the best ever.

What I Want When I Go Out

I so agree about the noise. 2 restaurants we were fond of were so loud, no music, just voices, that you almost had to yell to be heard across the table. One was a very old tavern, but there has to be some way to soundproof.

My biggest waste savers are 1. Compost barrel for all non meat waste, and our garden is happy, & 2. I make damn sure we eat all leftovers. That was where my biggest waste was. Totally my fault.

Too much hassle to bother with foods

Chiles Relleno - I can and have made them, but they are too much trouble, and we have a decent Mexican restaurant nearby.

Anyone use Netflix?

We love Netflix. Watch it some, most nights. We also just subscribed to Prime(amazon). We love the freedom from commercials, and the content we can choose. We are especially enjoying the British WW2 and earlier whodoneits. The costuming is beautiful, the old homes so regal and majestic, The old cars are amazing, and the language isn't foul. Yup, we're old, in our early 70's, but not prudes!! Try it. Prime has a 1 month trial before they bill you, Netflix probably has too. Our son showed us on our TV that is smarter than we are.
