Thanksgiving Guests! What are you bringing?

Going to our daughters, and our son will be there also, along with 2 grandsons. Since almost all of us love Rutabagos I will make a stockpot full of them, mashed. After dinner we split the leftovers. And I pay for the turkey to make things easier. I may be picking up a dessert too.
So happy to have daughter taking over holiday meals. I did my share of them before I was 70!!

How big spiral sliced ham?

I'm done with spiral sliced hams. They dry out, even when cooked with their instructions!! I'd much rather a butcher bought ham. Just my 2 cents worth!!

Carry-on Packable Foods to Take to a Food-Challenged Thanksgiving...

I took a cooked, frozen, pork butt roast, not yet pulled, to Indiana one time, and another took baked bread to AZ. Both times I emailed the TSA and asked specific questions. They responded promptly and politely. I had no problems. I am sure there are lots of people travelling with food this time of year. Good Luck, and hope the family gets it together some day. We never have had problems over holidays and the food or anything. I feel bad for those to whom holidays are strenuous.

Illicit indulgences

Sweetened Condensed Milk with Milk choco chips melted together, then cooled, with a spoon. Every few months 4 - 6, I just have to do it. just a little at a time to make it last for many days.

Is it disappointing for you not to eat turkey or ham on Thanksgiving?

Im a turkey for thanksgiving gal, and I think all our family is. I would never be upset if served something else, but I would go to the store and cook a bird myself within a couple of days. We often do turkeys at times other than Thanksgiving, Christmas and Easter.....we like them. And sometimes we do it smoked on the ceramic cooker. Love those birds!!

Parents of Adult Children: When should kids start picking up the check?

I don't see it as an age question(in our family anyway). I see it more as a question of ability to pay. We had it impoverished when we were raising kids, and I was always so grateful to hubby's parents who said "You just pay the tip, I've got the rest." My parents picked up the whole tab, and were well able to. We picked up the tab when our 3 kids were still struggling, but now allow them to sometimes. If they offer to pay the tip we let them. The one who is still raising their sons still has it pretty tight $$wise so we take care of them. When they are able we will accept their hospitality.

I had them in NC like you described, disgusting. And the help all looked Latin. We figured they were just doing the cheapest thing possible. This was while travelling, never went back. There are several really good ones in Myrtle Beach, SC.

Bad year for local corn?

Sorry you've had a bad year. We had 3 in a row here in Delaware, but this year has been fabulous. Corn so sweet we can't believe it. And keeps 3 days in the refrig uncooked without losing it's flavor and crispiness!!

May our good year spread to you next year!

Salt in restaurant food

I think the cure for oversalting has to start at the culinary school level. Many of us are used to undersalting, but I doubt it's being taught at the basic chef or cook level.
Altho I seldom get a restaurant meal that tastes too salty, I always come home from vacationing, mostly in Myrtle Beach SC, with swollen feet and ankles. After a few days of eating my cooking, the swelling subsides. Says something, doesn't it?

What's for dinner #320 -- The End and the Beginning Edition! [through August 23, 2014]

Since the pool has cooled down early this year, I am more interested in cooking. Tonight will be Meatza. The 'crust' is a mix of gr turkey & sage sausage, egg, seasonings, cooked 10 min then fresh tomatoes, of which we have a bunch, hence this choice, onions, bl olives, basil, and mozarella. And this is made in a sheet pan so there are yummy leftovers. We try to eat low carb all the time.

What Grocery Store Sales or Bargains Have You Bought Recently?

King Crab - 7.99/lb, Crab Claw meat, 5.99/lb Both @ Redners in Delaware. Crab Claw made great crab cakes, not as decadent as jumbo lump crab, but quite tasty. King Crab was so decadent and sweet. We also get beautiful thick boneless rib steaks that are big enough for us to share(size per person is about the size of a fillet mignon). They run 10.$ per steak - where can you get a good steak for 5$??

Any memories of "poor people food" from your childhood that you still crave?

Rice Balls. Cooked rice, raw hamburger(I use ground turkey now)1 raw egg, salt & pepper, chopped onion(lots of it) mixed together, formed into just smaller than tennis balls into casserole pan. Top with diced tomatoes and pour the juice in between the balls. 350 oven for an hour uncovered. I still fix these occasionally, seldom because we both tend to overeat when I do. Dayum they are good, oh, more pepper and salt on top before baking.
So simple, but a childhood favorite.

What's your favorite way to cook?

Hal2010, that is how I work. Def cleaning as I go, cannot stand a terrible kitchen to deal with at the end, or after a meal. It is so easy to learn to do that, I have no training, except waitressing, but picked up lots of good habits from watching the Cooking Channel before it went downhill.

On 13 in New Castle right near the Airport is Arners. It looks like a Diner but has upscale menu. We have never been disappointed. It is right at the junction of 13 & 141 at the overpass of 141. Excellent food, and nice salad bar. Great breads on the salad bar.

Bake them! in a little OJ, butter and a tad of sugar on top. My kids could go thru a whole casserole pan of them. You can put them under the broiler at the end just to brown the tops.
Or nuke them with the same ingredients. Oh so good.

Hellmans Original vs Hellmans Olive Oil Version

I got the olive oil version too. It is awful. Doesn't have that yummy flavor Hellmans is known for. I immediately replaced it with the original. My daughter experienced the same disatisfaction with the olive oil version.

Yes, we read flyers, and will try to take advantage of the marked down items. But occasionally we are out of lots of meats, and I have to do a heavy meat shopping regardless of the sale items.

Can tough (cooked) ribs be tenderized?

Pineapple juice has papain(sp?) which is a tenderizer. We always add it to wrapped racks of ribs for the last hour of cooking then put the packets in cooler wrapped in towels to keep hot and further tenderize. Maybe you can incorporate some of this into your dilema.

What foods have you made and then decided store bought was good enough, thank you, based upon cost, time, and taste?

Chilles Relenos. They were perfect, tasted JUST like the ones we get at fav Mexican restaurant, but very labor intensive. I'll wait til we go there from now on. Just the prep on the poblano peppers is a time consuming mess. I would use them for lots of dishes were they not.

I haven't tried this, but after pounding it out flat, the piece might be big enough to make 2 stuffed items?? I hate them so big too. I just bought the individually wrapped sliced breasts to do Chicken Francaise with, and the size and slices were perfect. 1 breast fed us both!! Worth the extra price for this.
