BBQ Rib help needed

I would put some Liquid Smoke on my hands and rub the rack before I put the rub on. AND A LITTLE SMOKE GOES A LONG WAY.

If you do them in the oven first, you just grill them enough to brown up the sauce you've put on them. If grilling the next day(how do you manage to save them overnight, LOL) yes, I would bring to room temp, brush with BBQ sauce then grill.

We smoke low and slow, and our next to last step is to put the rib rack in an oven cooking bag(closed tightly so you don't have juice in the towels), and put in a cooler wrapped in towels to keep it hot for an hour at least, have gone several. It tenderizes the meat.this is done before browning them up with sauce on the grill.

Your favorite blue cheese dressing (need help)

Everyone who has had this raves about it.

Nan's Blue Cheese Dressing

1 sm container of sour cream
wedge of Blue Cheese crumbled
Garlic powder to taste, we like a lot!!
onion powder 1/2 tsp
cayenne pepper, we like a little bite, flavor develops in a couple of hours
S & fresh ground pepper
1 dash of Worchestershire sauce.

Mix 1/3- 1/2 of blue cheese & sour cream + all flavorings in food processor or blender, then add the rest of the blue cheese crumbles Let rest for a minimum of 2 hours so flavors blend. If this is too thick, thin with a little milk to your desired thickness.

Storing cooked pork shoulder, longish-term

I have a food saver that we use for leftover pulled pork. And we only have that when we do an extra shoulder roast for us. Put it in plastic bag and squeeze as much air out as you can. Our tasted as good thawed as the day we cooked it. And you don't have to pay extra for boning. The bone will pull right out with your fingers from a low and slow cook.

Canned Shrimp - whats your opinion?

Canned shrimp smell fishy to me, and are way too soft for anything except dips.
And I am picky, picky, picky about where it comes from. Nothing from SouthEast Asia for sure.

Would you travel out of the U.S. for a great steak?

I didn't see the show, but I'm in no danger of travelling out of the country for steak unless I win a lottery so big I can afford a private jet and all the expenses that go with it.
And we have a Kamado Smoker Grill that gets up to 600 - 700 decrees that does steak perfectly.

Smoked Chicken Salad for a Camping Crowd

We have a Kamado Kooker, similiar to BGE, and do whole chickens all the time. I would do them whole, and while still warm, take all the meat off the bones and chop it, then freeze it in a freezable bag, or suck the air out of the bag with a straw, to preserve freshness. I might even pour the juice into the bags of chicken to insure juciness. It will be much easier at the campground to have all the ingredients ready to go. We used to camp and I always tried to prep as much as possible at home. We cook whole chickens @ 350 for about an hour, til thermometer is at 350 to 165.

SPAM

I love spam, and the kids used to love it.....I called it Spam Ham, 'cuz they loved ham.
I eat/cook it browned & crispy, in split pea soup(put it in near the end so it doesn't lose all it's flavor), and in beans & rice, same as in pea soup, I have oven cooked it sliced in a loaf pan with peach or pineapple between the slices, and even added cream for a nice sauce.
We don't eat it all the time, but it is sure convenient and tasty!!

One church we attended did this for 2 or 3 weeks for new mothers. It was so fun to plan and execute for the new mom. A sign up sheet kept it simple. And Mom knew who was bringing dinner!!

london broil cut of beef

Since both of my parents are gone now, thank God I never have to eat this cut of meat again. It was their favorite thing to serve. I hated it as a child, and still would never choose to eat it. Even the perfectly done med rare is tough, always. Why cook a meat you know that about when there are so many good tasty tender means around???

It could be one of several, flounder is what it looks like to me. And it looks fine. The veins may be layers of fat which give it a great taste. If it is from a reputable place with good turnover, I would ask which fish it is, and enjoy it!!

I have taken into the movies a bottle of water, and a container of precooked chicken I had cut up and a fork. On a keto diet not much in the theatre's arsenal of food would keep me eating correctly. And be damned if I would pay 3 or 4 $$'s for a bottle of water. Cold chicken isn't smelly or unpleasant.

Please learn now to make excuses without an explanation. It is proper, and no one should ask why you can't make it. I'm 71 and now that I've learned this, it sure has made my life easier not to have to 'come up' with a reason for not attending. After the fact like this strange situation is harder. I would just say that due to a prior committment I'd forgotten about, I won't be able to make it after all.

Restaurants and credit card fraud

We had this happen with a brand new card and a purchase at Best Buy. I went in to see them about it, and they couldn't have cared any less. We don't shop there any more. Obviously it happened from there, but we got a big arguement. Bank too over the investigation and we got new cards.

What trends do you see in the preparation of foods and drinks in restaurants?

I know Buffalo Wild Wings bartender is stupid. I ordered a Vodka Martini, up with a twist of lime. It came, way diluted down, only half full, and with a toothpick and 3 olives. I tried again, the server told me the bartender put the lime twist in when shaking it and took it out to serve. Where did they get this bartender from?????? Never again!!

How do you deal with the compulsive need for everyone to like your food?

At this womens church breakfast you take home your leftovers: I had been taking homemade Sausage Gravy & fresh biscuits(I live 2 doors away so they are hot when I get there). There was very little left over. When I decided to try a quiche that always gets rave reviews at home, I ended up with much to take home. My attitude? All the more for us!! We love it. Not many were familiar with quiche, so I just take the sausage gravy & biscuits, no big deal, enough have loved the quiche that I take no offense.

We did this with church members who had just had babies. We signed up for a certain day and delivered a whole meal @ 5 pm. It was well appreciated by Mom & Dad that they didn't have to cook for a week or 2.

How do you split the bill and tip evenly?

When we dined as a group and it was time to pay, we(usually I, even tho there was a CPA who organized the group) added up from the menu, everyones separate charges, and 20%-ed it. The CPA couldn't add up the tabs without a calculator, LOL. Everyone usually kicked in more than necessary, and our server did well.
This was at a small tavern frequented by many NASCAR drivers, owners & teams. Food is phenomenal. Most others came to 'see'. Super busy and very noisy. We quit going because you couldn't hear much of what was said, and 'seeing' the NASCAR folks, well they are just folks who make their living on a race track.
