Perfect Hard-Boiled Eggs

Eight minutes never works for me, unfortunately I have a ceramic top stove so maybe that's why. Typically I boil for 12 min, replace the hot water with ice water for 2 additional min, then cover and heavily shake until the shells slide right off.

If you poke a hole in the top of the egg, the YOLK ;) will be centered.
