Update on my reservations

Thanks for the suggestions on the earlier thread,

Here is what I have been able to book. I was not able to get reservations at Frenchie or Spring.

Oct 22 - l’Ami Jean
Oct 23 - Guy Savoy
Oct 24 - Nothing Yet --any suggestions for a Sunday??
Oct 25 - Joséphine chez Dumonet
Oct 26 - Regalade St Honoré

Will be in Burgundy 27 til the 30th ...I need a reservation for the 30th. What are the chances of a cancellation at Frenchie or Spring on a Saturday night.

and now Burgundy...

We definitely plan on doing Ma Cusine ..but beyond that we are still planning.

I am currently debating to whether to rent a car the three days we are in Beaune. We are doing a tour through Taste Burgundy one of the days and wonder would a car be worth it the remaining full day we have? We were thinking one of the evenings doing dinner at Lameloise. Is a taxi service a reliable option in this case?

Thanks to all for the Paris recs!

Our plan is to spend 3 days in Beaune. We plan to catch the train to Dijon from and then rent a car .

Besides Ma Cuisine.. what are the other 'must dine' in the area'?

PhilD - thanks for the insight. I think you understand what I am trying to do with my choices. Between CLJ and CJ..which one would you go? and why?

How hard is it to get a reservation at Spring?

Another "first time in Paris" Post

My wife and I are making our first trip to France this October. We live in New York and dine out quite regularly (Marea,Blue Hill,Gramercy Tavern). We plan to spend 4 days in Paris and 4 days in the Burgundy region

We want do at least one three star Michelin rated restaurant. We are used to Per Se and Jean George pricing, but it appears that some of the Paris three star restaurants can be more expensive. We are thinking Guy Savoy. This will also be my birthday dinner. Guy Savoy a good entry point into Paris three star restaurants? Recs for birthday dinner instead of Guy Savoy?

We are also thinking about dinners @ Fable de la Fontaine, Chez L ami Jean, Chez Josepine-Dumont. What do you guys think about those choices? What would you replace in those choices?
