We love hot and spicy foods, so this was the perfect idea for us to try. We loved it (with a few changes). I would not use the celery seed again. I will use a dry rub next time with a bit of cayenne, garlic powder, onion powder, and ground pepper. I injected some hot sauce directly into the breast, thigh, and leg meats. I used my turkey baster and put some of the hot sauce and butter mixture between the skin and meat (and also basted the skin with the hot sauce mix)! This turned out terrific. I'm sure we will be using this recipe every so often throughout the year--not just on Thanksgiving!!
