Spiked Apple Galette

The hit of Thanksgiving 2011. While a good cook, I am not the best pastry maker. This was perfection. I was able to roll out the dough, put the apple filling (delicious!) in and still have an eye-popping result. Using the Calvados, while expensive, really makes a difference since the reduction of apple cooking juices with the brandy is an amazingly subtle and delicious flavor -- not boozy at all. Only two pieces left and I'm sure tonight, it will disappear.

Butternut Squash Lasagna

Added the spinach (organic frozen, about a cup) and actually used organic frozen cubed butternut squash. Used whole wheat lasagna. Even more alarming (!) I reconstituted a dried wild mushroom mix in some cheap chardonnay and added about a cup of slice portabellas to the saute. Later used the mushroom/wine juice to the veggie mix while cooking instead of plain H20. It's still in the oven and smelling delicious ...

Denver Pizza

OK, I was born in Brooklyn, so ... Pasquini's is right up there in my personal top five. So is The Oven. Angelo's is good old-fashioned old school pizza. Bonnie Brae Tavern is amazing and lots of people swear by the Edgewater Inn.

Lots of people love BeauJo's, but probably because it's an opportunity to put honey on the thick crust (really) ...
