Another Homemade Tomato Sauce Thread...curious change from making in NY vs. CA.

I used to live in NYC/NJ and there really perfected my homemade tomato sauce. Finally figured it out to be the right taste and was very proud of the results. Generally, consisted of fresh tomatoes (roma) sometimes mixed with on the vine. Start with onions and garlic in olive oil, then one mushroom, pinch of red chili flakes then add the fresh tomatoes that I diced, skin on - seeds and inners removed, add in dried oregano, parsley, basil, salt, pepper, add some water to bubble up then simmer for a while. A times, if I needed more volume, I would add a box of Pomi. Anyway, always was excellent.

Life is good and finally got to move to Southern California and love it. EXCEPT....something is wrong with my sauce!

Use the same ingredients but the sauce seems to lack depth. I figured adding the mushrooms would provide that umami or depth flavor. I even dabbled with throwing in a little fish sauce but something still seems missing or different.

Has anyone encountered the same problem? Or have any insight? The BF suggests that maybe it's because the water is different. I am thinking maybe the tomatoes are different somehow.

So bummed.

Yeah that makes sense...kind of tough to know when the menu is a surprise. And both styles of preparations were offered throughout the courses.

Went with a 2011 Domaine Marcel Lapierre Morgon Beaujolais and it was a good choice. Fell in to the background as needed.

Wine Pairing for Veggie Forward – NY Seasonal Multi-Course Dinner Tonight

Realize it is last minute but was hoping for some fun suggestions to try with dinner tonight. Menu is unknown although it will be mulit-course, seasonal local fare and veggie forward.

With no help, I would probably end up settling on a pinot noir to cross the entire gamut from lighter veggies to hearty fall preparations. Any smart suggestions on something else to experiment with? Or should I bring two options?

Apologies on starting a new thread on similar subject but curious if the emphasis on Fall veggies and NY Local fare would differ the wine paring suggestions at all.

What food find still haunts you - that you had once and haven't found since?

This is kind of recent but I know it will continue to haunt me…

On the slopes of Verbier, had an amazing dish for lunch called rosti. I died. This version had lardo, gruyere and a fried egg on top.

After I got back home I did some research, I learned that it’s an all too common meal in Switzerland that I had never heard of before. In the last few weeks I have made several, severely failed, attempts at recreating it. Starting with raw potatoes, starting with cooled cooked potatoes, never getting it right. Perhaps the wrong pan.

I am determined to eventually figure it out.

My Vote for Best Falafel In Midtown, whats yours?

I second Crisp!

I never really ever enjoyed falafel before having it at the Crisp on Wheels truck. Crispy outside, soft inside, flavorful and healthy. Definitely a winner.

Tamarind Tribeca - what's all the hype about?

I agree. After being a big fan of Tamarind in Flatiron area I was excited to visit the Tribeca location for my birthday. The service was great but the food was totally a let down with some of my favorite options not even available...and (yeah, off the subject) worse even...if I didn't choose this venue, I would have been suprised with dinner at Daniel.
