These are fabulous. I would agree, though, maybe just a bit heavy on the salt. I halved the recipe and used 1 T of salt (kosher, yes) and it was still just a little salty for me. But the rest - amazing.... I also used half regular paprika and half pimenton.

Just a follow-up: I've made these a few times and I think part of the saltiness may have to do with the chili powder used. Mine has salt listed in the ingredients so that's probably got something to do with it.

Braised Short Ribs Problem

Thanks for the great visuals. That's almost exactly what I do, except at lower temp. AND probably half the amount of liquid. Next time I will amp up the liquid.

Great suggestions, ideas. I will definitely try more liquid next time - seems to be general consensus. For the foil, I had parchment paper between it and the ribs so the foil wouldn't have any contact with the food. And the ribs/liquid def didn't have a metallic taste. I only used the foil/paper combo to test whether my pot didn't have a tight enough seal.

Thanks - maybe I'll try a bit more liquid next time. I like the idea of reducing beforehand - I've actually got a recipe somewhere that calls for that. I will try it again - I just love short ribs and braises too much to stop!

Thanks, katecm. I used the parchment and foil this time because previously when it happened I thought maybe I didn't have a tight enough seal with just the pot lid alone. But it didn't seem to make any difference either way.

Braised Short Ribs Problem

Made some short ribs last time - cooked at abt 290 for 3-3.5 hours. The ribs were fabulous; however, the problem was the sauce. Originally wine/broth combo came to about 1/3 to 1/2 of the rib surface. A little more liquid appeared later on in cooking process but then towards the end the liquid reduced, and became thicker and opaque in the pot. It was almost like the fat and broth emulsified as it was no longer clear. This meant that it was almost impossible to separate off the fat at the end. This happened the last time, too, and I thought maybe the liquid was just evaporating. I have a good pot - a Staub - and I used both parchment paper and foil this time to ensure I had a good seal. I"m just mystified.... could it be the gel from the bones or something???? This only happens with short ribs, not chuck or pork shoulder.

6-qt Kirkland dutch oven - $50

I've never had a problem with rusting on the rim and I've used mine a lot over the last year and have left stuff in the fridge. I always wash it by hand. It seems strange that it would rust within 24 hours of buying it? If that is the case, I would definitely return it.

I think the one they have out right now is slightly different than the one I bought. For what it's worth, the one I bought is exactly the same as the house brand one Sur la Table sells for slightly higher. Obviously come from the same manufacturer.

Mine's a year old - no problems at all. For the cast iron pan, we usually put a towel between it and the cooktop. Cooktop looks brand new.

Also, the store we bought it from was perfectly happy to sell us an extended warranty for it ;)

6-qt Kirkland dutch oven - $50

I've had this dutch oven for about six months now and use it regularly, probably once a week. Have used it mainly for no-knead bread and braising. No complaints whatsoever. Made the best pot roast and short ribs ever with this oven. No problems with chipping but I do take good care of it, wash by hand, etc. At that price if it conked out on me, I'd buy another one...

Tuna Noodle Casserole

Absolutely fantastic. Used panko instead of crackers but other than that followed recipe and used really good tuna. Best tuna casserole EVER.
