Mayo mixture for chicken salad
I concur with Tarragon BUT the REAL secret to amazing chicken salad is to make your own mayo. It is super easy and you'll never by mayo in a jar again. In fact store bought mayo makes me sick to even smell. Homeade mayo all the way. Also add some grapes, raisins, nuts.

Kale-What Do YOU Do?
I rinse, chop it up into small pieces and here's the trick: massage it with olive oil for atleast 3 minutes. This will break up the toughness and bitterness. I then add red onion, grana padano and roasted hazelnuts. I have convinced many a kale-hater with this salad. It is so amazing.
