How Do I Thicken Buffalo Wing Sauce?

I have tried the bottled sauce - it is not the same. Bottled sauces are never as good as what's served in the restaurant. It's always an altered version.

That's exactly what I am doing - putting really hot Franks/butter right from the stove on the wings and it looks like I made soup with chicken bones. I will try cooling it down and see how that works.

Yes, that is the Duffs that I am talking about and the pictures I posted.

So a hotter sauce is not obtained through the mixing of sauces like say adding Dave's Insanity Sauce to Franks for example. Powdered chiles are most likely used instead?

Ya, I will have to find a store that has truly hot dry spices.

I get that, but I don't think even the Anchor Bar is using just Frank's and butter these days. And certainly the other most popular wing place - Duffs isn't per the pictures I posted.

I have a high tolerance for heat and I find that cayenne pepper - at least the one sold in regular grocery stores has no real heat to it that I notice. These types of dry ingredients are really made for people that think mild is spicy. Club House can't exactly sell suicide heat powder to the general public. I may have to find specialty shops for cayenne pepper and the like.

The only reason I am adding vinegar is because again - I love a strong vinegar taste that even Frank's doesn't provide. I don't know if you have tried Duffs compared to the Anchor Bar - Duffs being far superior especially these days, but it's very heavy on the vinegar and will clean out your sinuses. I love that. Although funny enough, some recipes online claiming to be the more modern version of the Anchor Bar recipe - add additional vinegar.

You are probably right - Duffs thickens with cornstarch. I have never used cornstarch before, but I would like to try it once after I try reducing first. Is that how most restaurant sauces and dips - buffalo sauce or otherwise are thickened - by using cornstarch?

The problem with adding more butter is that reduces the spice. If you like really spicy hot wings, you are supposed to add less butter and if you can't take much spice, you had more butter to whatever hot sauce you are using. Maybe if I actually add Sriracha - it will help thicken and not change the flavor too much if it's still primarily Franks.

So these wings from a Duffs picture I attached is not just hot sauce, butter and some other spices and vinegar?

You can tell that it is a thicker sauce in the photo. So no amount of simmering or reducing will get this result? There are other ingredients at play here?

So to clarify - letting the sauce simmer long and letting the mixture reduce in half with turn a watery sauce into something more like a Sriracha like consistency or like the pictures I added or are we still talking a runny sauce, but it's just not as thin?

Greetings,

I am making authentic buffalo wing sauce - Frank's and butter with some added vinegar, but I find that it's too watery and runny - it doesn't really stick to the meat. It's more like drenching the meat.

I would prefer to thicken the sauce without adding other sauces or foods that might change the authentic buffalo wing taste - like adding ketchup/tomato paste for example.

Is it just a matter of keeping on the stove longer to reduce? Typically I just heat it up, stir and mix it with the wings - so how long would I need to simmer to thicken it generally speaking?

I have added some photos just so you can see what I am talking about and the kind of thickness consistency I am looking for. If anyone has any specific recipes for a thicker buffalo wing sauce, that would be great as well.

Does Anyone Have A Recipe For Steak/Pork/Veal/Chicken Breast With Buffalo Sauce?

It certainly doesn't have to be steak - although a buffalo steak sandwich does some awesome, but I was just curious if anyone has added a buffalo sauce recipe to meat beyond chicken wings like beef, veal, pork and even chicken breasts.

I love buffalo sauce, but I need to cut back on all the wings I have been eating as I need to lose weight, so if I can apply a buffalo sauce recipe to all meats, that would be fantastic and I wouldn't feel like I am missing out so much on wings.

Does Anyone Have A Recipe For Steak/Pork/Veal/Chicken Breast With Buffalo Sauce?

I know buffalo sauce is just Frank's Red Hot and butter/margarine with maybe additional vinegar added - unless you want a much hotter sauce which requires more ingredients, but I am wondering if anyone here has a specific recipe for 1 or 2 steaks in terms of the exact amounts of the ingredients.

I am wondering if buffalo sauce doesn't have the same taste on beef as it does on chicken, because I did try to make buffalo sauce steak tonight and it tasted more like regular pepper steak as opposed to a steak with authentic buffalo wing sauce flavor. Anyway, this was my first time trying it, so I am sure I need to make it a few more times to get the sauce exactly right for a steak as opposed to wings.

I would appreciate any recipes for 1 or 2 steaks and I do like it really hot, so if there are additional ingredients beyond Franks, butter and vinegar - that's fine.

Duffs Wing Sauce Recipe?

I was wondering if anyone knew the Duffs Wing Sauce recipe or something close to it as possible.

It is not just Franks, vinegar and butter/margerine like the Anchor Bar for example - it is more of a tangy/sour sort of taste which could be the kind of vinegar they use.

There is some other sauce being used here. Some websites have claimed that it's worcestershire, so I am going to give that a try. Just wondering if anyone could verify that, as it would make sense - since worcestershire sauce is tangy and has additional vinegar in it beyond what you would have already added.

I just find the sauce tastier than the Anchor Bar and want to replicate it as much as possible, so hopefully someone here can help.

A few years ago, there seemed to be a small boom of hot sauce stores in Toronto, but they all seemed to have closed down.

Does anyone know of any quality hot sauce stores in Toronto? Or any store at all that has a fantastic selection of hot sauces for all kinds of foods, even if they don't just specialize just in hot sauces?

I appreciate your feedback - but the spicier the better for me. I also like a strong vinegar taste. I wouldn't like the honey addition. I totally understand if that kind of spice/flavor isn't for everyone though.

Nothing is wrong with it per se - it just doesn't taste the same as if I walked into Duffs. Are you suggesting that this is the Duffs recipe?

I am just asking if someone happens to know the exact recipe and not their own spin on it or what they think it is. Maybe someone worked there at some point for example.

Without giving away the full recipe, someone did mention online that cider vinegar was used instead of white vinegar, so that's obviously an important factor if true.

Anyway - like I said, just asking.

Well you could be right about embellising the recipe or the recipe changing a bit over time. Or maybe Duffs uses vinegar where as the Anchor Bar doesn't. I should have specified that it's Duffs where I almost gag on the vinegar fumus, but love the flavor it adds.

Since starting this thread, I have watched a bunch of YouTube videos and read a lot of websites from people claiming that they were told what the Anchor recipe was from people who worked there and it did include vinegar as this video indicates for example:

Franks hot sauce doesn't have plenty of vinegar in it. It's quite clear when eating at Duffs or the Anchor Bar that vinegar is added as the fumes almost make me gag, but the flavor is awesome.

I have put Franks on wings on home and it's just not the same.

After doing a little research, recipes online for the Anchor Bar recipe even state the addition of vinegar.

I had actually forgotten that the Anchor Bar sold their sauce, but I have found that anything bottled by a restaurant is never as good as going to the restaurant.

There is always something a little off as they have had to change certain things to be able to bottle it. However I have never tried the bottled Anchor Bar sauce, so it could very well be exactly the same as eating there. Have you tried it?

I find the Frank's wing sauce to pretty off at least in terms of the flavor that I get at the restaurants like Duffs or the Anchor Bar.

However I really like my wings to be very spicy when I have ordered them, so maybe more vinegar is added with heat, because the vinegar smell literally goes up my nose and practically clears my sinuses. You certainly don't get that in a Franks bottle of wing sauce, but I love the spicey flavor mixed with the intense vinegar. I guess I just need to play around with the vinegar to taste.

I will try your recipe though and let you know how it works out, so thanks.

I actually ask for heavy sauce. I love saucey food just in general. I mean it's not swimming in sauce when I get wings, but it's defintely "wet" and not just coated.

I assumed that the ingredients for the sauce are exact for the amount of wings specified in the recipe (4 or 5 pounds).

Since I am only making 1 or 2 servings of chicken breast, I didn't want to dilute the flavor I am trying to achieve by increasing or decreasing the ingredients per any recipe used ala too much vinegar or not enough or too much butter or not enough.

it's not really that simple if one cares about an authentic Buffalo wing flavor as opposed to just any Buffalo wing sauce that Hooters might serve. :)

It's more than just melt a bunch of butter and add Franks. I am quite sure the recipe's used at the Anchor Bar and Duffs have a little more to it than that if I were able to see them make it.

It's clear that the Anchor Bar or Duffs have vinegar mixed in with the butter and Franks just by taste alone. Franks doesn't have a vinegar flavor on it's own.

In addition, vinegar is listed as an ingredient in the supposedly real Anchor Bar recipe that I found online. But there seems to be many real Anchor Bar recipe's posted online and they all seem to have different ingredients.

But again, I am not making wings - I am making chicken breasts, so I imagine the quantity would be different for 1 or 2 chicken breasts as opposed to 4 to 5 pounds of wings per the ingredients below.

4 to 5 Lbs chicken wings
4 TBS butter or margarine (1/2 stick)
5 TBS Franks Red Hot
1 TBS white vinegar

My concern is with being able to get the authentic Buffalo flavor.

If I have left over sauce - that's fine, but the proper amount of vinegar needs to be mixed in with the proper amount of butter and Franks. If I was just using hot sauce, then it wouldn't matter how much I add.

When I say authentic, I am talking about Anchor Bar/Duffs kind of flavor as it seems everyone has their own idea as to what is authentic Buffalo Wing sauce when I visit various restaurants.

If I am not mistaken - I believe it's Frank's Red Hot, butter, white vinegar and celery seed. But I need to know what would be the proper amount for chicken breasts.
