King Arthur GF Brownie Mix,
Cup4Cup flour mix (the only mix I use. I bought a 25lb bag and keep it in gallon bags in the freezer. It really does work as a cup for cup substitute.)
Omission beer,
Trader Joe's Brown Rice Pasta (I think it might be Tinkyada repackaged?)
Trader Joe's Rice Mac and Cheese (I think it is Amy's GF repackaged?)
MAMA Instant Rice Noodles. (I've only see them in one store in Laurel, MD but they are great for my desk drawer with some bouillon cubes as a ramen substitute for when I don't have a lunch.)

Cup for Cup Pizza Crust Mix (ok but ATG is better)

The one thing I really miss since going GF is ______.

Ordering chinese takeout, and ordering anything I want off a menu. I've found decent GF pasta, and pretty good GF pizza, but chinese takeout is the biggest stumbling block. I can make a stir fry, and there is one company that makes GF pot stickers (but they are crazy expensive). I just want the option to be lazy some days :)

Plain old rice flour works great. I always have it and use it to make a beautiful b├ęchamel.

Vegetarian, Gluten-free mains

Hello everyone,

I'm interested in ideas for vegetarian, gluten-free mains that are NOT GF pasta with sauce. Also avoiding mushrooms, tofu, and bell peppers would be good.

Everything I've been coming across lately feels like a side dish to me (I'm a meat eater and GF, cooking for a vegetarian). Stuffed squash, quinoa salads... doesn't feel substantial enough for me.

Sharing Ideas for Gluten-free Eating

Most soy sauce IS a problem. Look on the label - usually it's "soy and wheat" and nothing else. Maybe some water. That is absolutely not OK. Japanese soy sauce, called tamari, is usually safe because it usually does not contain wheat, but sometimes it can so you have to be careful.

Spice strategy?

I second http://www.custommagneticspicerack.com - I bought my magnets and tins from them. I got a range of sizes and magnets for I think 18 or 25 spices along with named label stickers.

I keep them stuck to my fridge. It looks cool and they are in a convenient place in my tiny kitchen. I thought about inside of my cabinets but I wasn't sure if that would hold everything in a place I could reach (I'm pretty short).

Swiss Chard Stuffed Shells

It sounds tasty, but when I put it in to my calorie calculator - each serving comes in at 615 calories! Any ideas how to lighten it up a bit? Even with part-skim ricotta it's 570 per serving!
