Difference between Gorganzola & Blue Cheese?

Thx Mother of Four. I guess if I want to purchase authentic Gorganzola it's going to have to say on the label "Product of Italy - (DOC)" just like great wines in France control their growths. Stella cheese products are from Wisconsin and I'm sure the labeling is not controlled by any appellation. However, if you like Stella cheese - Blue or otherwise - - what's the problem.

Putting pizza stone on charcoal grill

Usuing parchment paper to slide a pizza on a stone is the easy way. If you want to do it like the pizza patlors, I'm sure you know that using cornmeal on a pizza paddle makes it work like small ball bearings. The pizza rolls off the paddle quite easy. But you have to put the dough on the paddle and put your ingredients on quickly so that the moist dough doesn't make the cornmeal soggy - bad news! Get it on the stone or non-stick baking pan asap. As they say in golf, trust you swing. In the case of a pizza paddle, trust your thrust!!

Difference between Gorganzola & Blue Cheese?

I know that Gorgonzola is only one of the several cheeses known as “Blues”. However, when I go to a convenient local “supermarket” I find different containers labeled as Gorgonzola and Blue Cheese from more than one supplier. How can I tell if the one labeled Gorgonzola is what I am getting and vice-versa. I have a suspicion that the cheeses are sometimes mislabeled. You may say “so what”, but I don’t like to be duped. I would like to get what I paid for. How do you discern the difference – taste, smell, texture??? I need a cheese maven to give me some advice so that I can intelligently tell the difference. I know if I go to a cheese specialty store I probably can trust the proprietor. However, I still would like to really know what to key on when I visit a supermarket.

Unbelievable that this NYC pizza place gets little or no recognition?

Coincidence - No. Never saw that site. I was born in SI. Left SI when they built the BRIDGE but still go back to visit family. I have been around. Most original SI-ers pick Lee's as the best. However, Denino's and J & P's are greeaaatt!! I could never stop at 2 slices at Lee's

The Slice review was ok but did not do justice to this Lee's pie that has been consistently made great for 50 or so years. Sausage pie is delicious. Hangout for NYFD guys and longtime S.I.ers.

Can't understand why Lee's Tavern in Staten Island gets very little press as being one of the top pizza places in NYC. So you know I'm not an amateur, - I have been to: the other SI places Denino's, Pat & Joe's, Nunzio's, Ciro's, Goodfella's, etc. Also Totonno's Bklyn, Grimaldi's, Patsy's, Johnny's Westchester, Frannies, Grimaldi's, John's, Luzzo's, etc etc. Also all the New Haven Joints - Modern, Pepe's, & Sally's. Many more including some of the new places in Manhattan that are getting good press lately. What happened when it comes to Lee's Tavern getting recognition - really good thin charred crust with great sauce stuff. Try the sausage pie.

Is it because it doesn't have an Italian name? Maybe Lee has to stay under cover eh eh?
