Side dishes for raspberry and balsamic-glazed Cornish hens

For (Canadian) Thanksgiving this year, I am making raspberry balsamic-glazed Cornish hens wrapped in bacon, but I am at a loss as to what side dishes to serve with the hens. My Mom's boyfriend is making a butternut squash soup as a starter, and I'm making pumpkin something for dessert; maybe a mousse instead of a pie. Side dishes must be mushroom-free, but other than that, there are no restrictions.

Side dishes to go with roasted duck?

I'm making a belated Valentine's dinner for me and my boyfriend on Sunday, and I would like some suggestions on what to serve with duck. I'm going to be making a whole roast duck with a sour cherry glaze. Sides cannot contain mushrooms, as my man is allergic to them, but other than that, there are no dietary concerns.

I'd sort of like to serve potatoes of some kind with the duck, though I don't have any concrete ideas as to what I want to do with the potatoes.

Stuffing recipe for someone who doesn't like stuffing

So I'm going to have a late Easter dinner with some friends (one of whom will be doing some of the cooking at my place), involving a roast turkey, sweet potatoes in lemon-ginger cream sauce, and possibly ricotta gnocchi (not sure about dessert yet), but here's my problem: I'm the only person in the crowd who hates stuffing. I find it kinda disgusting, but everyone else likes it and my Mom, oddly enough, volunteered me to make the stuffing, and I can't think of anything I'd like.

Any ideas? I don't want anything super-heavy or with too much celery. Also, one of my dinner guests can't eat mushrooms, so anything with mushrooms is out. I'm thinking that I might like something with nuts and/or fruit, be it fresh or dried, but other than that, can't come up with anything. I have until Tuesday to decide on something.

What to serve with gnocchi

So my guy is coming over for dinner tomorrow night, so I plan on making gnocchi, but am not sure what to serve with it. Chocolate pudding is for dessert. I have some kosher chicken pieces (with skin and bone) in the fridge, so I might like to use them, but not sure what would go well with gnocchi.

Ooh, sounds good! I usually make a pumpkin spice cake, because my Dad always hated pumpkin pie, so I said "I'm going to make a pumpkin dessert that he'll like!" and I was successful. I've never tried a pumpkin cheesecake.

So I'm making Cornish hens for my Canadian Thanksgiving, but don't really have any ideas for side dishes or desserts. I salt the hens and then roast them at a high temperature in a skillet (a la Zuni Cafe in San Francisco), which makes for deliciously tender and juicy meat with crispy golden skin, but it's fairly salty, so I don't want to cook anything else really salty as a side dish. Any ideas? I often cook sweet potatoes and/or squash dishes (sometimes with apples) to go with chicken, and pumpkin-based desserts, but I'm open to other suggestions. Thanks!

Leftover pierogi filling?

I made a batch of pierogies lastnight, and I wound up with A LOT of leftover filling, and am wondering what to do with it, since I don't have ingredients for more pierogi dough. It's potato, cheddar and onion filling. I suppose I could just eat it like mashed potatoes, but I'd kind of like to do something different. Any ideas would be appreciated!

What to do with 7-year-old cheddar?

Thanks for all the suggestions! I would never have thought of putting cheese under the skin of the chicken;sounds fantastic! I also love the idea of making an apple pie and serving the cheese alongside it, and I'm nuts about tomato soup and grilled cheese together.

BTW,my quiche turned out incredibly well; it has a potato-and-caramelized onion filling on a buttery cheese crust. The cheddar's flavour is so strong that I only needed a bit more than half a cup for the filling.

What to do with 7-year-old cheddar?

I really hope that I'm posting in the right area. I just bought a block of amazing 7-year-old cheddar cheese from my local farmers' market this morning, and I'm wondering what to do with it. I've already made a quiche with the first half of it, but have no ideas as to using the rest. I'm making a roast chicken for dinner tomorrow night, so I'm hoping for some side dish ideas. I also have some homemade gnocchi in the fridge... could I possibly use the two together somehow? Any suggestions would be appreciated.
