History of microwave-cooking?

People really did cook (not try to cook) all kinds of food. I used to teach microwave cooking. And, "NO" I didn't work for one of the microwave companies.
If you only use your microwave to defrost things, you shouldn't bother having one! I live in Arizona and when it is 118 outside, I don't want to warm the kitchen by turning on the oven! Another item I use to bake with is my grill...then I get the browning that I usually can't get with my M/W unless I'm using a browning skillet.

fresh figs: preserves?

I make strawberry fig jam which everyone loves!
3 c. chopped strawberries
3 c. chopped figs, 1/2 c. water
1/4 c. lemon juice
1 pkg. pectin
4 c. sugar
Put all but sugar in large pan and stir well. Bring to boil and then add the pectin. Bring back to rolling boil and cook an additional 1 minute. I then take my Cuisinart hand held blender and stir the mixture well with it. Can! I also have recipes for Fig/Orange Spice Jam and plain Fig Jam if you are interested.

Jam won't set up!

I make jelly from desert plants and cacti. I have a heck of a time getting it to set. Where do you buy your commercial pectin? I make 1000's of jars and the small boxes of pectin get a little expensive. Thanks for any help you can give to me.
