Excellent Taco Recommendations

Thank you everybody for the recommendations. I used quite a few of them and all of my friends were impressed. You guys and girls rock.

I used the taco bar idea and served:

Flank Steak (7 spice rub, sear, bake to medium)
Shrimp (marinaded with lime, pepper and oil)
Pickled Red Onions
Jicama Slaw
Queso Fresco
Lettuce
Tomato
Avocado
Chimichurri Sauce
Chipotle Sauce
Small Corn Tortillas

The steak went over especially well. The only thing I would have changed is to find better corn tortillas or make my own.

The Lovely Lemon

I use lemon juice when making mac and cheese on the stove top. I use shredded cheese keeps the cheese from getting stringy and adds acidity to the dish.

I thank Alton Brown for that tip.

I like having a reason behind the things that I'm doing when I cook. Also "I'm just here for the food" has meat magnets in it!

Tip: I used his shrimp scampi recipe to make Shrimp Scampi pizza. It's fantastic.

All great replies so far, I am using a lot of ideas on this list. Including but not limited to: pickled red onions, Chimichurri sauce, chipotle sauce, spicy slaw, pineapple with the steak, small tortillas...

Best food to cook in a cast iron pan

I am now super hungry after reading over this thread.

My wife uses it to make cast iron cookies which are fantastic. It ends up basically making a flat perfectly toasted giant cookie and then we cut it into slices.

Excellent Taco Recommendations

I have some friends coming to visit in a week and I plan on making tacos. I have on vegetarian in the group so some tacos will be tofu and some will be flank steak or pork.

I always see good advice on this site so I am looking for any and all recommendations on how to build unique awesome tacos. In particular I'm looking for toppings or sauces to put on them other than just lettuce, tomato, cheese, sour cream and salsa.

"Light sesame sauce" recipes?

I've been toying with stir fry sauce for a while now. Finally pieced in some of what was missing by doing some research. often times these sauces will have oyster or fish sauce in them as well as Rice Cooking Wine or dry sherry. I invested in some oyster sauce and it was well worth it. Sounds gross, tastes amazing.

What's your "secret ingredient?"

Pomegranate juice. Still finding new uses, but my favorite is in BBQ sauce. Simmer it with lemon juice and brown sugar for about 5 minutes and then add the rest of the sauce ingredients. Add some heat and it's a good balance of sweet and spicy.

What's your "secret ingredient?"

I've heard that one before. I've heard it referenced as "going rancid" when heated. I came across this when researching coconut oil. If you do a search for coconut oil information you will get a whole list of websites that claim vegetable oil and olive oil go rancid when heated releasing toxins that harm your body.

While I do believe that high heat can cause this effect on olive oil, I'm not yet willing to believe the claims that harmful toxins are being released when it is heated.

How do you keep track of all the recipes you want to try?

My method is about the same as ChristinaMason except I never bothered to even use labels (I probably should have). Gmail search is for those of us who don't want to bother with a long term organization strategy. As long as you put the right keywords or tags in your emails, you'll be able to find all applicable recipes with an easy search. I use this method for every recipe I have tried and want to come back to and I haven't lost any of them yet.

The other method I use (occassionally) is StartAid. It's a Firefox browser online bookmarking add-on, helpful because you can access your bookmarks from anywhere. I use this for many recipes that I want to try.
